Baking bananas is amazing. I love to have them on hand because banana cake and bread are some of my most favorite things. I knew I was going to make banana cupcakes last week for our gender reveal party so I bought a bunch of bananas to ripen them before.
However, my boys were on a banana kick and so I had to go and buy some more and they weren’t ripe enough to bake my cupcakes. We had to come up with a quick solution so that I could get them baked on time. Here is what we did in order to get those bananas ripe and ready to go.
You need your bananas, a pan with either parchment or non stick mats. There will be juices that will leak from the bananas.
Preheat the oven to 300 degrees Fahrenheit and then spread out the bananas on the cookie sheet. Bake at 300 degrees for 20 to 30 minutes. I flipped them over half way through. There will be some extra juices that you will want to dump off the bananas in order to make your batter not too watery. I drained off as much as I could before putting it into my cupcake batter.
