Beef Fajitas Freezer Meal

Shredded Beef Fajitas Freezer Meal, a quick and easy freezer meal.

 

 

Like I said yesterday, I am having a hard time to find the energy to want to cook dinner. I’m tired. I am not sleeping well and Grey hasn’t been sleeping well either. We are 4 weeks from baby and I am starting to feel nervous. I don’t know why I feel so nervous about this child, but I do. I get home and I just want dinner to be ready. 
I threw this in the crockpot yesterday afternoon at lunch and it tasted great last night. Dinner was easy to throw together which I totally appreciated the lack of effort when I got home. The boys and I were starving! It was so good!

 

 

Ingredients
  • 1 pound beef roast
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 15 oz can diced tomatoes, drained
  • 1 cup beef broth
  • 3 cloves of garlic, minced

 

 

Directions
  1. Cut the roast into 3 even pieces. Add beef, onion, bell pepper, diced tomatoes, broth and garlic to a gallon freezer bag.
  2. Seal the bag and push out all the air.
  3. Thaw in the fridge overnight. Cook on low for 5 to 6 hours. 
  4. Cut or shred the beef and serve with whatever toppings you like. Matt likes fresh peppers and onions, but serve it however you would like!!
