Now that we are in full swing of back to school and trying to balance school and activities can make my home crazy! I don’t know if you are like me but it’s hard to get back into a schedule. The area that I’m struggling with the most right now, is cooking healthy meals at home. In the Summer, it’s so easy for me to say ” it’s Summer, we can eat out”! With that being said, I want quick and easy recipes that taste amazing! Let me present to you, quick and easy chicken pot pie!
Chicken pot pie is one of my favorite comfort foods! When you are able to make something that tastes so amazing in only minutes!
- Prepare buttermilk biscuits according to package directions.
- Cook onion, green beans, garlic and carrots in butter in a large saucepan over medium-high heat until softened, 2 to 3 minutes. Sprinkle flour over the top of the veggies. Slowly add the milk and chicken stock and mix to incorporate. Bring to a boil, reduce heat, and simmer, stirring often, until thickened, 6 to 8 minutes.
- Stir in shredded rotisserie chicken, green peas, cook until warm, 4 to 5 minutes. Season with salt and black pepper. Serve topped with biscuits.
