Because I have had such bad morning sickness I’ve been a really lame mom/wife lately. It’s a sad thing to be in October because I love getting festive for Halloween. In an attempt to spice things up a bit I wanted to throw a kick-off to October party for my son and husband. 

 
 

I had grand plans of Homemade Apple Cider, a fabulous meal of Slow Cooker Chicken Taco Chili, delicious dessert, and festive gifts. Reality settled on Crockpot Taco Soup made from whatever I could find in the pantry, rice Krispie treats that I didn’t have the right food coloring for, and two little books for Cooper wrapped in pre-used wrapping paper. A classic it’s-the-thought-that-counts moment. It was still fun!

 

I meant to make these pumpkin-shaped rice Krispy treats from  Cincy Shopper, but found out a little too late that I didn’t have any red food coloring to make orange. I improvised and made green monsters! My one-year-old loved them. Plus they were super simple and easy which is exactly what I needed.

Monster Rice Krispie Treats

INGREDIENTS:

6 cups Rice Krispie Cereal
3 tbsp. Butter
10 oz.  Marshmallows (approx. 1 Bag)
Green Food Coloring
3 Tootsie Rolls

DIRECTIONS:

1. Melt your butter in a large saucepan over low heat
2. Add marshmallows and stir constantly until melted
3. Remove from heat
5. Add approx. 6 drops of green food coloring
6. Mix in Rice Krispies
7. Form small balls into a monster shape
8. Cut a piece of tootsie roll for the eyes. (I also added a white sprinkle)
