Heavenly Eggnog Cookies

egg nog cookies 1
This is the time for eggnog! My hubby and my daughter Andie look forward to this time of season for that one small fact. So of course, we needed to try it in cookie form and boy was it a hit. Andie took the leftovers to drill team and we got the two thumbs up approval!

Ingredients:
3/4 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
2 egg yolks
2 teaspoon vanilla
1/2 cup eggnog
3 cups flour
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 teaspoon cinnamon
Frosting:
1/2 cup butter, softened
5 to 7 Tablespoons eggnog
1 teaspoon vanilla
3 cups powdered sugar
Directions:

  • Preheat oven to 350 degrees. In a bowl, combine together flour, baking powder, salt, nutmeg, and cinnamon.
  • In a separate bowl, combine butter, white sugar and brown sugar until light and fluffy. Mix in the egg yolks completely.
  • Add the vanilla and eggnog. Make sure you turn your mixer on low, and then add the dry ingredients and mix well.
  • Scoop the dough out onto a baking sheet covered with parchment paper. Space cookies 2 inches apart. Bake for 11 to 13 minutes. Cool completely.
  • Frosting: In a bowl, whip the butter until it’s fluffy. Add the vanilla and eggnog and then the powdered sugar. Depending on the consistency you want, you might need to add more eggnog.
