According to my hubby, everything is better with coconut. He tries to convince me to make everything with coconut.

Not to mention the fact that coconut oil is really good for you, not so good for you when combined with loads of sugar like this, but it makes me feel justified in eating it. Winking smile

Coconut Snickerdoodles

INGREDIENTS

1/2 cup coconut sugar

1 1/4 t. Cinnamon

1/2 c. coconut oil

1/2 c. butter

1/2 c. coconut sugar

1 c. sugar

4 eggs

1 t. vanilla

2 1/2 T. water

6 cups flour

2 t. Cream of Tartar

1 t. baking soda

1/2 t. salt

Coconut Snickerdoodles

Directions:

Preheat oven to 350 degrees. Mix 1/2 cup coconut sugar and cinnamon in a small bowl, set aside. In a large mixing bowl combine butter, coconut oil, and sugars and mix until fluffy. Add eggs, vanilla, and water. Mix dry ingredients in a separate bowl, sift together, and add one cup at a time until fully mixed. Roll a golf-sized ball in the sugar-cinnamon mixture. Bake on a greased cookie sheet for 9-10 minutes. Let cool and enjoy!
