I LOVE salads but it seems like I get into a rut and make the same old salad each time. This salad is light and lean and it full of flavor!!!

The dressing is fruity and some of the guys in our house didn’t appreciate the flavor but thought this salad would be great with Ranch dressing, there goes the healthy part!! Whatever dressing you prefer, you will enjoy this salad.

 

Healthy Chopped Asian Chicken Salad

Ingredients:

For the Dressing:
3 Tablespoons rice vinegar
3 Tablespoons sweet chili sauce ( we used our homemade chili sauce)
2 teaspoons sesame oil
1 teaspoon soy sauce
5 Tablespoons orange marmalade
2 teaspoons fresh ginger (dry will work)
1 Tablespoon honey
1 Tablespoon  fresh lime or lemon juice
1 teaspoon salt

Chicken Salad:
1 cup red bell pepper, diced
1 cup carrot, diced
1 cup red cabbage, diced
6 green onions, thinly sliced
2 to 3 cups rotisserie chicken, diced
1 cup cilantro, chopped
1/4 cup sesame seeds
1/2 cup salted peanuts, chopped

Directions:

  • Combine all dressing ingredients in a mixing bowl. pour into a jar with a tight fitting lid. Place in the refrigerator.
  • Combine all salad ingredients, except the peanuts, in a large bowl and gently stir to combine.
  • Drizzle with 1/2 cup of the dressing and toss to coat veggies and chicken.
  • When serving, sprinkle peanuts on top and let everyone add more dressing to salad, if they would like.

I found this fun idea on Pinterest. Thinly slice the cucumber and place some of the salad on the slice. Roll it up like a cinnamon roll and then stick it with a toothpick. Looks kind of fancy!!!
