Chicken Pesto Sandwich

 

Chicken Pesto Sandwich! I have never been to Zupas before, but since it had changed my husband’s life, I thought I would look at recipes that claimed to be a copycat and then put my own twist on the sandwich. I love chicken sandwiches and I found a sandwich that makes me say “YUM”!

This might turn into my new favorite sandwich and I WILL make this over and over again.

Chicken Pesto Sandwich

Ingredients:

Ciabatta buns
1 tomato, sliced
Romaine lettuce
Muenster cheese
2 cups rotisserie chicken, cubed
1 roasted red pepper, cubed
1/2 cup sliced almonds
1 batch basil pesto, recipe below
1 cup mayonnaise

Basil Pesto:
2 Tablespoons basil leaves
2 garlic cloves
3 Tablespoons Extra Virgin Olive oil
1/4 cup parmesan cheese
1 teaspoon fresh lemon juice
salt and pepper, to taste

  • Mix all ingredients in a food processor

Chicken Pesto Sandwich

Directions:

  • Mix together chicken, red pepper, almonds, basil pesto and mayonnaise until combined.
  • Crisp up your bun and melt a slice of cheese by putting the bun in the oven set to broil.
  • Layer your chicken mixture on top of the melted cheese and add a slice of tomato and Romaine lettuce.
