We have had a ton of left over potatoes lately! So I’ve been having fun! Here is a quick and easy way to pan fry some potatoes for 2!

Ingredients

 
 
2 potatoes
1 garlic clove
3 tablespoons of butter
1 teaspoon of fresh parsley
2 teaspoon kosher salt
1/2 cup of Italian bread crumbs

Wash and slice your potatoes. I like the skins, if you do not you make also peel them. Heat a medium sauté pan to medium, put in butter, diced garlic, kosher salt and chopped parsley. Let it cook for about five minutes then put in your potatoes, cook them for about 10-15 minutes until they are cooked through. Then turn up the heat to medium-high, and add the bread crumbs. Cook until they are golden brown. This is a really good random side that we just threw together. Hope you like it!!
