Whole Roasted Chicken

Ingredients

  • 4 pound (2kg) whole chicken, at room temperature giblets and neck removed from cavity*
  • 1/4 cup unsalted butter, melted
  • 3 tablespoons olive oil
  • 1 lemon, cut in half
  • Salt and freshly ground pepper, to taste
  • 2 tablespoons fresh chopped parsley
  • 1/2 large onion, halved
  • 4 garlic cloves, minced
  • 1 head of garlic roughly peeled and cut in half horizontally through the middle crosswise

Directions

    1. Preheat oven to 400°F.
    2. Lightly grease Dutch oven with olive oil.
    3. Discard the neck from inside the cavity and remove any excess fat and leftover feathers. Pat dry with paper towels.
    4. Pour the olive oil, melted butter, and the juice of half a lemon over the chicken, under the skin and inside the cavity. Season chicken liberally on the outside and inside the cavity with salt and pepper. Sprinkle over the parsley.
    5. Rub the minced garlic over the chicken, mixing all ingredients together over the chicken and under the skin.
    6. Stuff the garlic head into the chicken cavity along with the onion and the squeezed lemon. Tie legs together with kitchen string.
    7. Place breast-side up into Dutch oven. Roast for 1 hour and 15-20 minutes, basting halfway through cooking time until juices run clear when chicken thigh is pierced with a skewer.
    8. Baste again, then broil for a further 2-3 minutes, until golden.
    9. Remove from the oven, cover with foil and allow to stand for 10 minutes before serving. Serve, drizzled with pan juices and remaining lemon half cut into wedges or slices.

💭 Final Thoughts

This Whole Roasted Chicken is proof that comfort food doesn’t have to be complicated. It’s hearty, flavorful, and versatile enough to be a weeknight dinner or a Sunday showstopper. Plus, it’s the kind of recipe that makes everyone smile — and isn’t that the best kind of cooking?

Here’s the thing about roasted chicken — it’s never just chicken. It’s the smell of garlic and lemon filling your kitchen, the joy of carving into golden crispy skin, the comfort of knowing dinner is going to be a hit.

And this Whole Roasted Chicken? It’s a keeper. It’s juicy, it’s golden, it’s indulgent, it’s fun. It’s the kind of recipe that makes you feel like you’ve turned everyday ingredients into something restaurant‑worthy.

But what I love most is how recipes like this bring us together. Food has that magic — it’s not just about eating, it’s about sharing. It’s about swapping tips, laughing over buttery fingers, and building little traditions that make life tastier.

So here’s my challenge to you: make this dish, share it with your people, and then tell me your twist. Did you add rosemary? Did you sneak in extra garlic? Did you double the butter just because you could? (No judgment — I’d be first in line for that version.)

💬 Reader prompt: Should we do a “Sunday Dinner Series” next? I’m dreaming up pot roast, baked ham, and maybe even lasagna.

Until then, may your chicken be golden, your garlic fragrant, your lemon zesty, and your kitchen filled with laughter, love, and second helpings. Because at the end of the day, recipes like this aren’t just about cooking — they’re about celebrating the little joys that make life delicious.
