If you would have told me about 10 years ago that I would be sharing a Sweet potato, and Butternut squash soup with you, I would tell you that you were crazy! I grown up a lot since then. lol!!! When I use to think about soup it was the basic recipes, you know, tomato, chicken noodle, clam chowder, and that was about it.

If you are like I use to be, your missing out! It doesn’t taste like Sweet potato or even Butternut squash. It’s a creamy goodness that can’t be described! It’s dreamy!! Not to mention that it is so simple to make that you will have a gourmet dish in minutes.

 

 

Sweet Potato and Butternut Squash Soup

Sweet Potato and Butternut Squash Soup

Ingredients

  • 1 large can sweet potatoes,
  • 1 12 ounce bottle butternut squash
  • 1 lb. cooked roasted chicken, shredded
  • 1 small onion, chopped
  • 3 to 4 cloves garlic, minced
  • 4 cups chicken broth
  • 2 teaspoons chili powder
  • 1 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 oz. cream cheese, softened
  • 1 cup heavy cream

Instructions

  1. In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and cook for 4-5 minutes until softened. Stir in the minced garlic and cook for another 30 seconds, until fragrant.
  2. Add the sweet potatoes, butternut squash, and chicken broth to the pot with the onions and garlic. Bring the mixture to a simmer, cooking for 10-15 minutes, until the vegetables are completely tender and the flavors meld together.
  3. Use an immersion blender to blend the soup until smooth and creamy, or carefully transfer the soup in batches to a blender. Once blended, return the soup to the pot.
  4. Stir in the cream cheese, heavy cream, chili powder, smoked paprika, salt and pepper. Cook over low heat for 5-7 minutes, stirring in chicken. Keep stirring occasionally, until the soup is velvety and well-combined. Taste and adjust salt and pepper as needed.
