If you would have told me about 10 years ago that I would be sharing a Sweet potato, and Butternut squash soup with you, I would tell you that you were crazy! I grown up a lot since then. lol!!! When I use to think about soup it was the basic recipes, you know, tomato, chicken noodle, clam chowder, and that was about it.
If you are like I use to be, your missing out! It doesn’t taste like Sweet potato or even Butternut squash. It’s a creamy goodness that can’t be described! It’s dreamy!! Not to mention that it is so simple to make that you will have a gourmet dish in minutes.

Sweet Potato and Butternut Squash Soup
Ingredients
- 1 large can sweet potatoes,
- 1 12 ounce bottle butternut squash
- 1 lb. cooked roasted chicken, shredded
- 1 small onion, chopped
- 3 to 4 cloves garlic, minced
- 4 cups chicken broth
- 2 teaspoons chili powder
- 1 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 4 oz. cream cheese, softened
- 1 cup heavy cream
Instructions
- In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and cook for 4-5 minutes until softened. Stir in the minced garlic and cook for another 30 seconds, until fragrant.
- Add the sweet potatoes, butternut squash, and chicken broth to the pot with the onions and garlic. Bring the mixture to a simmer, cooking for 10-15 minutes, until the vegetables are completely tender and the flavors meld together.
- Use an immersion blender to blend the soup until smooth and creamy, or carefully transfer the soup in batches to a blender. Once blended, return the soup to the pot.
- Stir in the cream cheese, heavy cream, chili powder, smoked paprika, salt and pepper. Cook over low heat for 5-7 minutes, stirring in chicken. Keep stirring occasionally, until the soup is velvety and well-combined. Taste and adjust salt and pepper as needed.
