🍌 Sourdough Banana Bread — The Loaf That Does It All

If comfort food had a crown, this bread would be wearing it.

Sourdough Banana Bread

Some breads are fussy. Some breads are bland. But Sourdough Banana Bread? It’s the magical mash‑up of tangy sourdough starter and sweet, overripe bananas that creates a loaf so moist, flavorful, and downright cozy you’ll wonder why you ever made banana bread without it.

It’s the kind of recipe that makes your house smell like heaven, your taste buds do a happy dance, and your family ask, “Wait, is there more?” Spoiler: there should always be more.

💬 Reader prompt: Are you team “banana bread for breakfast” or team “banana bread for dessert”?

I know I make a lot of banana recipes, but you know how kids can be. They want a banana everyday, multiple times a day one week and the next they will never eat a banana again.

With all the over ripe bananas, I have to make something they’ll eat or else what a waste. This bread gives an extra layer of flavor that I’ve never had in banana bread! Give it a try!

Sourdough Banana Bread

Ingredients

  • Butter, for coating the pan
  • 2 cups overripe bananas (appx. 1 1/2 cups lightly smashed)
  • 1 1/4 cup light or dark brown sugar
  • 1½ tsp extract
  • 2 large eggs
  • 1/2 cup bubbly, active 100% hydration sourdough starter
  • 1 1/3 all-purpose flour
  • 1½ tsp baking soda
  • 1/4 tsp fine sea salt
  • 1/2 cup vegetable oil
  • 1/4 heavy whipping cream

Directions

  1. Preheat the oven to 375 F.
  2. Lightly coat one 9×5-inch loaf pan with butter.
  3. Add the bananas, sugar, and vanilla to a bowl. Cream with a hand held mixer or stand mixer fitted with the paddle attachment, about 30 seconds to 1 minute.
  4. Add the eggs, one at a time until fully incorporated. Add the sourdough starter.
  5. Sift the flour, baking soda, and salt together in a separate bowl. Working in batches, add this to the banana mixture.
  6. Add the heavy cream and oil and mix until just combined. Do not over do it.
  7. Pour the batter into the prepared pan.
  8. Bake for 60- 65 minutes, until rich golden brown and a toothpick comes out clean. Cover with foil if the loaf browns too quickly.
  9. Cool in the pan for 20 minutes, and then transfer to a wire rack to cool completely.

💭 Final Thoughts

This Sourdough Banana Bread is proof that simple ingredients can create something truly special. With bananas, sourdough starter, and a little love, you get a loaf that’s moist, flavorful, and perfect for any time of day.

It’s also endlessly adaptable. You can keep it classic, go chocolatey, or even turn it into French toast. And because it’s so easy, it’s perfect for breakfast, snacks, or cozy Sunday baking.

Here’s the thing about banana bread — it’s more than just a loaf. It’s comfort, tradition, and connection all baked into one pan. It’s the smell of bananas and sugar filling your kitchen, the sight of golden crust rising in the oven, and the sound of happy chatter as everyone grabs a slice.

And this sourdough version? It’s a little extra special. It’s tangy, it’s sweet, and it’s guaranteed to make you the star of any breakfast table.

So here’s my challenge to you: bake it, share it, and tell me your twist. Did you go nutty? Did you sneak in chocolate? Did you eat a slice straight from the pan before it cooled? (No judgment — I’ve been there.) Snap a pic, post it, and tag it so we can all drool together.

💬 Reader prompt: Should we do a “Banana Bread Series” next? I’m dreaming up peanut butter swirl, double chocolate, and maybe even a chai‑spiced loaf.

Until then, may your bananas be spotty, your starter bubbly, and your kitchen full of laughter, love, and second helpings.

  1. This recipe combines two things I absolutely love. Sourdough and Banana Bread. My husband and kids will be in 7th heaven when I make this for them. In fact I have some bruised bananas ready to go!
