Sour Cream Chicken Enchiladas

Ingredients

 
2 pounds of Chicken Breast
1 medium onion diced
3 garlic cloves, diced
1 teaspoon cumin
1 teaspoon chili powder
3 limes squeezed
8 (8 inches) flour tortillas, Softened
1 1/2 cups Mexican blend cheese
1/3 cup butter
1/3 cup flour
20 oz. Chicken broth
1 1/4 cup sour cream
1 (4 oz.)  can be chopped green chilies

🍽 Directions

Step 1: Cook the Chicken

  1. Cook chicken in a skillet with onion, garlic, cumin, chili powder, and lime juice.
  2. Shred chicken once cooked.
  3. Mix in ½ cup cheese.

Step 2: Make the Sauce

  1. Melt butter in a saucepan.
  2. Whisk in flour to form a roux.
  3. Slowly add chicken broth.
  4. Stir until thickened.
  5. Add sour cream + green chilies.
  6. Do NOT boil — sour cream gets cranky.

Step 3: Assemble the Enchiladas

  1. Fill tortillas with chicken mixture.
  2. Roll tightly and place seam‑side down in a baking dish.
  3. Pour sauce over the top.
  4. Sprinkle remaining cheese.

Step 4: Bake

  1. Bake at 350°F for 25–30 minutes.
  2. Broil 2 minutes for golden cheese.

Step 5: Serve

  1. Serve warm with cilantro, lime, or pico.
