Let’s dive in.

My husband loves Ginger Snap cookies! Mike’s grandma used to make them for family parties, they were one of her signature cookies.

This cookie is full of flavor and it is so softy and chewy, it will make you feel like a kid, again!

I love the hard gingersnaps from the store. I love to soak them in a big glass of milk. These cookies aren’t hard or dry, they are the total opposite! These little gems will win over your heart.

Soft Gingersnap Cookies

Ingredients:

3/4 cup butter, softened
1 cup of sugar
1 egg
1/4 cup molasses
2 1/2 cups flour
1 Tablespoon ground ginger
1 Tablespoon cinnamon
2 teaspoon baking soda

1/2 teaspoon cornstarch
1 teaspoon salt
1/2 cup sugar for coating

Directions

  1. Preheat & Prep
Preheat your oven to 350°F. Line two baking sheets with parchment paper or silicon mats to ensure even baking and easy cleanup.
  2. Cream the Butter and Sugar
In a large mixing bowl (or stand mixer), beat softened butter and 1 cup of sugar on medium speed for about 2–3 minutes. You’re aiming for light, fluffy peaks—this step traps air for tender cookies.
  3. Incorporate Egg and Molasses
Crack in the egg, then drizzle in the molasses. Continue mixing until the mixture turns glossy, smooth, and deeply fragrant—like a liquid hug of flavor.
  4. Combine Dry Ingredients
In a separate bowl, whisk together flour, ground ginger, cinnamon, baking soda, and salt. This dry mix is your spice superhero squad.
  5. Form the Dough
Gradually add the dry ingredients to the wet mixture, stirring until just combined. The dough should be soft and slightly sticky—resist the urge to overmix.
  6. Roll and Coat
Scoop out 1½-tablespoon portions of dough (about 1-inch balls). Roll each ball in the extra 2 tablespoons of sugar until fully coated, creating that signature sparkle and slight crunch.
  7. Bake to Perfection
Place dough balls 2 inches apart on prepared sheets. Gently press each ball down to about ¾-inch thickness. Bake 8–10 minutes until edges are set and tops crackle—underbaking by even 30 seconds guarantees a pillowy center.
  8. Cool and Enjoy
Allow cookies to cool on the baking sheet for 2 minutes. Then transfer them to a wire rack to cool completely. Peek through a crackling top and inhale that spicy-sweet aroma before diving in.

* We love to add the Chocolate Kiss to the cookie. Make sure the cookie has cooled partially, before adding the Kiss.

Cooking Tips: Mastering the Art of Softness

  • Chill When Warm
If your kitchen is feeling tropical or your dough is too soft, pop it in the fridge for 10–15 minutes. Cooler dough handles like a dream.
  • Sugar Sparkle
Don’t skimp on rolling dough balls in that extra sugar. It’s the secret to the delicate crisp exterior and picture-perfect sheen.
  • Perfect Spice Balance
Want more heat? Add an extra ½ teaspoon of ground ginger or a pinch of ground cloves. For a mellow backdrop, cut back the ginger by ¼ teaspoon and boost cinnamon.
  • Watch the Clock
These cookies transition from soft to overdone in the final 30 seconds. Pull them when edges look set and tops are cracked, even if centers seem slightly underbaked.
  • Single-Sheet Workflow
Limited sheet pans? Bake in batches, letting the finished batch cool on one tray while you prep the next—no downtime for your craving.

Recipe Variations: Play with Spice & Style

  1. Citrus Zest Delight
    • Stir in 1 teaspoon of orange or lemon zest to the dry mix. The bright citrus lifts the spice and adds a festive twist.
  2. Chocolate Drizzle Drama
    • Melt ½ cup dark chocolate chips and drizzle generously over cooled cookies. Finish with a sprinkle of flaky sea salt for extra WOW.
  3. Maple Glaze Magic
    • Whisk together ½ cup powdered sugar, 1 tablespoon pure maple syrup, and 1 teaspoon vanilla. Drizzle on cooled cookies for a fall-inspired glaze that makes every bite sing.
  4. Extra Chewy Bourbon Boost
    • Add 1 tablespoon bourbon or rum to the wet ingredients for an adult-only version. The alcohol cooks off, leaving depth and warmth.
  5. Gluten-Free Goodness
  • Swap all-purpose flour for a 1:1 gluten-free flour blend. If needed, add 1 teaspoon xanthan gum for structure—nobody should miss out on these.

Storage & Make-Ahead Hacks

  • Freeze Cookie Dough
Roll dough into balls, sugar-coat, then flash-freeze on a tray. Transfer to a freezer bag. Bake straight from frozen, adding +1–2 minutes to bake time.
  • Storing Baked Cookies
Keep in an airtight container at room temperature for up to 5 days. Place a slice of bread inside to maintain softness—bread = moisture magnet.
  • Refresh in Seconds
Reheat on a microwave-safe plate for 5–7 seconds to bring back that just-baked warmth and softness. Perfect for midnight cravings.
