Raspberry Lemonade Bars

Need a sweet pick-me-up that feels like sunshine on a cloudy day? These Raspberry Lemon Bars marry tart lemon with juicy raspberries, all hugged by a buttery shortbread crust and a sweet-tangy glaze. They’re the life of any tea party, the star of your picnic basket, and the perfect treat for when you need a little burst of happiness.

This recipe blends pantry staples—flour, sugar, butter—with the fresh vibrancy of lemons and raspberries. No fancy equipment is required: just a mixing bowl, a baking pan, and your enthusiasm. You’ll whisk, press, bake, and glaze your way to dessert heaven in under an hour. Whether you’re baking for your besties, surprising coworkers, or spoiling your kiddos, these bars deliver big on flavor and charm.

Picture flaky shortbread that melts on your tongue, followed by a zingy layer of lemon custard speckled with bright bits of raspberry. The final drizzle of raspberry-infused icing sets these bars apart, making them look as stunning as they taste. Ready to make your kitchen smell like a citrus orchard in bloom? Let’s get started.

I’m getting pretty excited about the warm weather and the fresh fruit that comes with it. My daughter, Lisa, is always telling me to buy raspberries and then she doesn’t eat them. I hate to let them go to waste and this time it didn’t happen.

I love my lemon in my Diet Coke but I don’t usually love lemon desserts. I know, what’s wrong with me?  But the amount of love that I found for these Raspberry Lemonade Bars is over the top.  It’s the perfect combination of fudgy texture like a brownie and the tartness of the lemon and raspberries will leave you speechless.

Yes, it’s the perfect dessert for Summer but take my word, it will get you singing show tunes right now.

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, cream the softened butter and granulated sugar until light and fluffy, about 2–3 minutes with an electric mixer.
  3. Beat in the eggs one at a time, then stir in lemon juice, lemon zest, and salt until fully combined.
  4. Gently fold in the flour until just incorporated—overmixing will toughen the crust.
  5. Press two-thirds of this dough evenly into the bottom of the prepared pan to form the crust. Reserve the remaining dough.
  6. Scatter fresh raspberries over the crust. Crumble the reserved dough on top to create a rustic streusel layer.
  7. Bake for 25–30 minutes, or until the top is golden and the raspberries are bubbly. Cool completely in the pan on a wire rack.
  8. Meanwhile, whisk together powdered sugar, raspberry jam, lemon juice, and lemon zest until smooth. Adjust thickness by adding more powdered sugar or lemon juice.
  9. Drizzle the glaze over cooled bars. Cut into 16 squares and serve. Store leftovers in an airtight container in the fridge for up to 4 days.

Cooking Tips

  • Soft Butter Matters Room-temperature butter whips into a lighter crust. If it’s too cold, microwave in 5-second bursts.
  • Don’t Overmix Once you add the flour, stir just until there’s no visible powder. Overworking the dough makes it tough.
  • Choose Ripe Berries Soft, sweet raspberries create the juiciest pockets. Avoid underripe or mushy berries.
  • Line Pan Smartly Use parchment with an overhang for effortless bar removal. No flipping or chipping!
  • Even Crumb Topping Crumble remaining dough with your fingers for an airy streusel—uniform chunks bake more evenly.
  • Cool Before Glazing Warm bars melt the glaze and make it runny. Let them cool to room temperature for a neat drizzle.
  • Adjust Glaze Consistency If it’s too thick, stir in a drop more lemon juice. Too thin? Add extra powdered sugar.
  • Chill for Clean Cuts Pop the pan in the fridge or freezer for 15 minutes before slicing. Bars slice into clean squares without crumbling.

Recipe Variations

  1. Blueberry-Lemon Twist Swap raspberries for fresh or frozen blueberries. Increase lemon zest to 1 full lemon for extra zing.
  2. Coconut Drizzle Magic Stir 2 tablespoons shredded coconut into the streusel and sprinkle on top of the glaze.
  3. Shortbread Swap Replace half the all-purpose flour with almond flour for a nutty crust. Reduce sugar by 2 tablespoons.
  4. Berry Medley Use a mix of raspberries, blackberries, and sliced strawberries for a colorful summer medley.
  5. Lavender Lemon Bars Add 1 teaspoon dried culinary lavender to the crust. Gently crush with mortar and pestle for better infusion.
  6. Chocolate Chip Sparkle Fold ¼ cup mini white chocolate chips into the dough before pressing into the pan.
  7. Vegan-Friendly Version Use plant-based butter, swap eggs for 2 tablespoons aquafaba (chickpea brine), and replace heavy glaze with coconut yogurt drizzle.
  8. Gluten-Free Twist Substitute all-purpose flour with a 1:1 gluten-free blend. Press firmly to compensate for lower gluten structure.
  9. Citrus Combo Add zest of half orange along with lemon for a dual-citrus punch. Top with candied orange peel slivers.
  10. Spiced Streusel Incorporate ¼ teaspoon ground cardamom and a pinch of cinnamon into the streusel for autumn flair.

Kid Tips

  • Mini Mixing Crew Let little chefs help cream butter and sugar. Their full-on whisking energy makes the crust light and fluffy!
  • Streusel Finger Art Encourage kids to crumble the topping with their fingers—everyone loves squishing dough.
  • Berry Sorting Game Make berry prep fun by turning it into a sorting challenge: ripe versus unripe.
  • Glaze Drizzle Station Fill small squeeze bottles with glaze. Kids love controlling the swirl patterns on their bars.
  • Rainbow Sprinkle Party Offer a rainbow of sprinkles to dust over the glaze—mini artists adore bright colors.
  • Hide ‘n’ Seek Fruit Peel a few raspberries for older kids who might be hesitant—peek-a-boo berries disappear into the glaze.
  • Tea Party Presentation Pack bars on fun plates, alongside tiny teddy-bear cookies or fruit slices to make snacktime magical.
  • Safety First Always handle the hot pan. Young helpers can focus on non-heat tasks like sprinkling zest or stirring glaze.
