Potato Tomato Corn Salad

Ingredients: 

1 pound baby red potatoes
5 medium ears of corn
1-pint grape tomatoes halved 
1 small red onion, sliced thinly
1 large bag baby spinach
1/4 cup olive oil
2 large lemons, juiced
1 teaspoon salt
1 teaspoon pepper
 

Directions:

  • Place the potatoes in a pot of salted water and bring to a boil. Cook until tender when you poke with a fork, it will be about 15 minutes. Drain potatoes in a colander and rinse them with cold water to stop them from cooking.
