Keto Pizza

Say goodbye to carb hangovers and hello to cheesy, crunchy bliss. This keto pizza is your cheat-code to enjoying a slice (or three) without derailing your low-carb goals. We’re talking a golden, pillowy crust crafted from mozzarella, cream cheese, and almond flour—a trifecta of melty, stretchy, nutty goodness that’s here to rescue pizza night from boring salads and sad leftovers.

This recipe is as customizable as your favorite playlist: pile on meats, veggies, sauces, and cheeses to make it uniquely yours. Whether you’re a pepperoni purist, a veggie devourer, or a barbecue chicken enthusiast, this crust is your canvas. And the best part? You can whip it up in under 30 minutes of active time, then sit back while your oven does the heavy lifting.

Get ready to level up your pizza game, impress your friends, and satisfy every cheesy craving. Burgundy lipstick optional but highly encouraged.

I have been on the lookout for a recipe that would taste and feel like real-life pizza and this one is it! Lisa, my 17-year-old, has been diligent with the keto diet. When she was trying out for cheer at the end of April. She had a couple of girls come over to get ready. I ordered normal pizza for them from Mod Pizza and I thought I was being a great mom because I ordered the cauliflower crust pizza for her!

It was so bad for her Keto diet!  This is so good that even if you’re not on Keto, you will love it!

Instructions

  • Preheat & Prep
  • Preheat your oven to 450°F (230°C).
  • Line a baking sheet or pizza stone with parchment paper—this is your pizza’s VIP stage.
  • Melt the Cheeses
  • In a large, microwave-safe bowl, combine shredded mozzarella and cream cheese.
  • Microwave on high for 45 seconds, then stir. Repeat if needed until fully melted and smooth.
  • Mix the Dough
  • To the bowl of hot cheese, add the egg, almond flour, baking powder, Italian seasoning, and garlic powder.
  • Stir vigorously with a spoon until a sticky dough forms. It might look weird at first—stick with it.
  • Shape the Crust
  • Place the dough on a sheet of parchment paper. Top it with another piece of parchment.
  • Roll out the dough with a rolling pin to about ¼ inch thickness. Remove the top parchment and give the edges a little hand-shaping if they need smoothing.
  • First Bake
  • Transfer the parchment (with crust) onto your baking sheet or stone.
  • Bake for 10 minutes, or until the crust edges just start to turn golden.
  • Top It Up
  • Remove the crust from the oven (keep the heat on!).
  • Spread your sauce of choice in an even layer. Load up with cheeses, meats, and veggies.
  • Final Bake
  • Return the pizza to the oven for another 5–8 minutes, until cheese is bubbly and toppings look irresistibly melty.
  • Serve & Savor
      • Pull it out, let it rest 2 minutes, then slice into six pieces.
    • Garnish with fresh herbs or crushed red pepper for that final flourish

Nutritional Facts

Let’s talk nutrients, because we love feeling good about what we eat:

  • Total Fat: Wave goodbye to carb crashes—healthy fats from cheese and almond flour give you steady energy.
  • Protein: Mozzarella and toppings provide a solid protein punch to support muscles and keep hunger at bay.
  • Fiber: Almond flour brings in fiber that’s gentle on digestion and helps you feel full.
  • Net Carbs: With only about 2g net carbs per slice, you can indulge without compromise.
  • Electrolytes: Add a pinch of salt or top with olives and bring in a dash of sodium to help keep electrolytes in check, especially if you’re deep into keto.

Cooking Tips

  • Don’t Skimp on the Cheese Melt: Make sure your cheeses are fully melted before adding dry ingredients. Lumps = stress.
  • Use Parchment Paper: It’s a game-changer for clean removal and easier flipping. No parchment? Lightly oil the sheet.
  • Roll Thin & Even: A uniformly thin crust bakes evenly—no undercooked middle or burnt edges.
  • Preheat Thoroughly: A piping-hot oven is key. Crack the door only to slide the pizza in; you want full heat.
  • Watch It Like a Hawk: Oven variances happen. That final 3-minute window can turn perfect pizza into late-night char.
  • Rest Before Slicing: Let the pizza chill for 2–3 minutes so the cheese firms up slightly, making cleaner cuts.
  • Double the Dough (for Two Crusts): Make a second batch and stash it in the fridge for next-day pizza magic—because leftovers rock.
  • Experiment with Cheese Blends: Try cheddar-mozzarella for sharpness or swap in gouda or provolone for smoky vibes.
