On the Sundays that our family doesn’t come for dinner, we are always looking for a good wholesome activity. Our teenager is usually in the basement, it’s cold outside and you can only watch TV for so long. This is how bread making on Sunday afternoon came to be. We have made it for relatives and it makes the best French toast casserole ever, but since Mike is trying to do keto, we can’t keep it in the house. I know, right? How do you give away homemade bread? It’s hard, really hard.

I think that making bread seems like a task on a few can do and that’s just not true. It’s easier than it looks and the taste is amazing. The hardest thing about making homemade bread is not eating it all in one sitting. Warm and fresh bread from the oven, it heaven with or without butter.

• 2 teaspoons fine sea salt
• 1 packet (2¼ teaspoons) active dry yeast

Directions

1. Activate the Yeast: In a small bowl, combine warm water, sugar, and yeast. Stir gently and let sit for 5 to 10 minutes until foamy on top. If it doesn’t foam, your yeast might be expired—swap in fresh yeast and try again.
2. Mix the Dough: In a large bowl, whisk together flour and salt. Make a well in the center and pour in foamy yeast mixture plus melted butter. Use a wooden spoon or silicone spatula to stir until a shaggy dough forms.
3. Knead by Hand (or Stand Mixer):
• By Hand: Turn dough out onto a lightly floured surface. Knead for 8 to 10 minutes, adding small pinches of flour as needed, until smooth and elastic.
• Stand Mixer: Fit mixer with a dough hook. Knead on medium-low for 5 to 7 minutes.
4. First Rise: Lightly oil a clean bowl, place dough inside, and cover with a damp kitchen towel or plastic wrap. Let rise in a warm spot for 1 to 1½ hours, until doubled in size.
5. Shape the Loaf: Gently punch down the dough to release excess air. Transfer to a lightly floured surface, shape into a 9×5-inch loaf by flattening into a rectangle, rolling from one short end, and pinching seams closed.
6. Second Rise: Place shaped loaf seam-side down into a greased 9×5-inch loaf pan. Cover and let rise for 30 to 45 minutes, until puffy and just above the pan’s rim.
7. Bake to Golden Perfection: Preheat oven to 375°F (190°C). If desired, brush the top of the loaf with melted butter for extra richness and a glossy finish. Bake on the center rack for 25 to 30 minutes, until crust is golden brown and internal temperature reads 190°F (88°C).
8. Cool and Slice: Remove loaf from pan and transfer to a wire rack. Let cool at least 20 minutes before slicing to ensure clean, even cuts.

Cooking Tips

  • Always measure flour by spooning it into your measuring cup and leveling it off. Scooping directly can pack too much and yield a dense loaf.
  • Use slightly warm water to activate yeast. Too hot and you’ll kill the yeast; too cool and it won’t bloom properly. Aim for about 110°F (43°C).
  • Knead until the dough passes the “windowpane test”: stretch a small piece between fingers—if it forms a translucent membrane without tearing, it’s done.
  • Rising environment matters. If your kitchen is chilly, create a makeshift proofing box by placing the dough in the oven with just the light on.
  • Brushing melted butter on the loaf before and after baking delivers a tender crust and that bakery-level shine.
  • To avoid a gummy bottom crust, bake on a preheated baking stone or place a second sheet pan under your loaf pan.

Recipe Variations

  • Herb-Infused Twist: Stir in 1 teaspoon dried rosemary or thyme into the dry ingredients for an aromatic loaf perfect alongside soups.
  • Honey-Butter White Bread: Replace sugar with 2 tablespoons honey and swap melted butter for honey-butter glaze. Drizzle 1 tablespoon honey on top immediately after baking.
  • Garlic-Parmesan Bread: Mix in 2 teaspoons garlic powder and ¼ cup grated Parmesan. Sprinkle extra Parmesan on top before baking. Serve with olive oil dipping sauce.
  • Whole-Grain Upgrade: Swap half of the all-purpose flour for whole wheat flour. Increase water by 2 tablespoons to compensate for extra absorption.
  • Sweet Cinnamon Loaf: In the final roll-out, spread 2 tablespoons softened butter, sprinkle 2 tablespoons cinnamon sugar, then roll up. Bake as directed and dust with powdered sugar glaze.
  • Seeded Topper: Before baking, brush with egg wash and sprinkle a generous tablespoon of sesame seeds, poppy seeds, or everything bagel seasoning for extra crunch and flavor

Kid Tips

  • Mini Master Bakers: Divide dough into small balls, let kids shape mini rolls. Bake 12 to 15 minutes at 375°F (190°C) for perfect bite-sized fun.
  • Dough Paint Station: Set out small bowls of food-safe colored gels and let children “paint” patterns on unbaked dough before the second rise—vibrant swirls make bread magical.
  • Counting Fun: Teach math as you count cups of flour, teaspoons of yeast, and minutes of kneading—practical skills disguised as play.
  • Safe Kneading Zone: Show them how to press and fold dough safely. Little hands love the tactile “bubble pop” feel when punching down the dough after the first rise.
  • Flavor Testers: Offer small samples of herbs, seeds, or spices before mixing so kids learn to taste-test their ingredients and explore flavors.
  • Patience Puppet: Place a cute timer or stuffed animal “bread buddy” next to the dough to help them understand that rising time is part of the magic.
