Ingredients:

  • 4 cups cubed butternut squash
  • Olive oil, salt, pepper
  • 4 cups mixed greens
  • ½ cup crumbled goat cheese
  • ¼ cup toasted pecans
  • Balsamic glaze

Directions: Roast squash at 400°F for 25 minutes. Toss greens with squash, goat cheese, and pecans. Drizzle with balsamic glaze.
