The school year is coming up! I’m going back to school, Matt got a new job, and with our little homie baby Grey; we have no time for breakfast! Freezer meals have been a lifesaver in the past so we are doing breakfast freezer meals!
This time we are trying them out in advance and see which ones work the best. When Amber and I, did the meals in the past I think we got a little too ambitious. We did 10 for each of us and it took all day.
I’m doing one a day for the rest of the summer and hoping that we will have enough to last us a while during the school year. Matt loves English muffins and he always loves eggs, this was the perfect breakfast for him! Give these a try!

Freezer Ham and Egg Muffins
Ingredients
- 8 English muffins
- 10 eggs
- 8 ham slices
- 8 slices of cheese
- salt and pepper to taste

Directions
- Preheat the oven to 350 degrees F. Whisk eggs in a large bowl and salt and pepper to taste. Pour into a grease 9×13 inch pan. Bake for 10 to 15 minutes until the eggs are set.
- Meanwhile, split the muffins and toast them. Top with ham and cheese.
- Pull eggs out of the oven and cut into eight equal squares and put on top of ham and cheese. Stack together the sandwiches and serve warm.
- To freeze: we individually wrapped them in sandwich bags and then put them all in a freezer Ziploc bag. Freeze for up to two months. When you are ready to eat them, then pull it out of the freezer and heat them up in the microwave for 30 seconds.

💭 Final Thoughts
These Freezer Ham and Egg Muffins prove that comfort food doesn’t have to be complicated. They’re hearty, flavorful, and versatile enough to be a weekday staple, a family favorite, or a “just because” indulgence. Plus, they’re the kind of recipe that makes everyone smile — and isn’t that the best kind of cooking?
Here’s the thing about breakfast muffins — they’re never just breakfast. They’re the smell of eggs sizzling, the joy of cheese melting, the comfort of knowing you’ve got a dish that’s both playful and nostalgic. They’re the kind of recipe that makes you feel like you’ve pulled off a meal prep miracle without breaking a sweat.
And these Freezer Ham and Egg Muffins? They’re keepers. They’re savory, they’re fresh, they’re indulgent, they’re fun. They’re the kind of recipe that makes you feel like you’ve turned pantry staples into something restaurant‑worthy. They’re hearty enough to feed a family, flexible enough to adapt to whatever toppings you’ve got hanging out in the fridge, and comforting enough to become the dish your family requests again and again.
But what I love most is how recipes like this bring us together. Food has that magic — it’s not just about eating, it’s about sharing. It’s about swapping tips, laughing over cheese‑splattered counters, and building little traditions that make life tastier. It’s about the kids sneaking extra bites when you’re not looking, the friends who ask for seconds, and the quiet satisfaction of knowing you’ve created something that feels like home.
So here’s my challenge to you: make this dish, share it with your people, and then tell me your twist. Did you add jalapeños? Did you sneak in pickles? Did you double the cheese just because you could? (No judgment — I’d be first in line for that version.) Maybe you turned them into breakfast hash, or gave them a holiday glow with cranberry sauce. Whatever your spin, I want to hear about it.
💬 Reader prompt: Should we do a “Breakfast Glow Series” next? I’m dreaming up breakfast burritos, pancake muffins, and maybe even cheesy breakfast casseroles.
Until then, may your eggs be fluffy, your ham savory, your cheese melty, your muffins golden, and your kitchen filled with laughter, love, and second helpings. Because at the end of the day, recipes like this aren’t just about cooking — they’re about celebrating the little joys that make life delicious.
And if you take nothing else from this post, let it be this: Freezer Ham and Egg Muffins aren’t just breakfast, they’re a lifestyle. 🥯✨🍳🧀
