I had a friend tell me that sourdough discard can enhance any recipe and make it that much better. I believe that she is right but also, I always have so much discard. I need to be able to use it more and my kids love sourdough pancakes but I don’t always have the time to make actual homemade ones because Harper won’t let me put her down lately.

This is a great way to enhance you Krusteaz pancake mix and make them super yummy and fancy according to my children. Ellie has been my little sous chef lately and sometimes things get added that are great and sometimes we have to start over because, well you know.

She added “sparkles” this time while I was changing Harper and it turned out great because she didn’t add too much! Then obviously we had to top the pancakes with them also. Enjoy.

Ingredients

  • 1 1/2 cups Krusteaz pancake mix
  • 1 cup milk
  • 2 eggs
  • 3/4 cup sourdough start, this is just what I had so I dumped it all in
  • 1/2 cup sprinkles

Directions

  1. Preheat nonstick griddle to 350.
  2. Whisk together Krusteaz, milk, eggs, discard and sprinkles. When it’s mixed together well, using about a quarter cup make your pancakes. I used to always grease the griddle but now I realized the pancakes cook and look better when you don’t.
  3. Cook until golden brown, top with sprinkles and buttermilk syrup.
