I thought I was busy before Grey was born. Nothing compares to now! We are getting kicked out of our rental house in January so we are packing our stuff a little at a time so we don’t have to do it all at once. With that we need to start clearing out the food in our cupboards and freezer.
This is a recipe born out of the food we had in our cupboard. We had leftover frozen hot dogs in our freezer as well as corn bread! Hence, easy baked corn dogs, it only took me 10 minutes to put together! Give these a try they were yummy!

Ingredients
- 2 boxes Jiffy corn muffin mix
- 1 cup sour cream
- 6 tablespoons melted butter
- 2 large eggs
- 8 hot dogs

Directions
- Preheat the oven to 400 degrees. Spray an 8″ x 8″ square pan with nonstick cooking spray.
- In a large bowl combine all the ingredients except the hot dogs. Stir to combine and then pour half of the mixture into the pan. Cut the hot dogs in half and lay them flat on the batter. Then top with the remaining batter. It completely covered my hot dogs.
- Bake until golden brown and a toothpick comes out clean, about 20 minutes. Let cool slightly, then slice and serve. We served with ketchup and mustard.

💭 Final Thoughts
These Easy Baked Corndogs prove that comfort food doesn’t have to be complicated. They’re hearty, flavorful, and versatile enough to be a weekday staple, a family favorite, or a “just because” indulgence. Plus, they’re the kind of recipe that makes everyone smile — and isn’t that the best kind of cooking?
Here’s the thing about corndogs — they’re never just dinner. They’re the smell of butter melting, the joy of hot dogs sizzling, the comfort of knowing you’ve got a dish that’s both playful and nostalgic. They’re the kind of recipe that makes you feel like you’ve pulled off a dinner miracle without breaking a sweat.
And these Easy Baked Corndogs? They’re keepers. They’re savory, they’re golden, they’re indulgent, they’re fun. They’re the kind of recipe that makes you feel like you’ve turned pantry staples into something carnival-worthy. They’re hearty enough to feed a crowd, flexible enough to adapt to whatever toppings you’ve got hanging out in the fridge, and comforting enough to become the dish your family requests again and again.
But what I love most is how recipes like this bring us together. Food has that magic — it’s not just about eating, it’s about sharing. It’s about swapping tips, laughing over batter-splattered counters, and building little traditions that make life tastier. It’s about the kids sneaking extra bites when you’re not looking, the friends who ask for seconds, and the quiet satisfaction of knowing you’ve created something that feels like home.
So here’s my challenge to you: make this dish, share it with your people, and then tell me your twist. Did you add jalapeños? Did you sneak in cheddar? Did you double the butter just because you could? (No judgment — I’d be first in line for that version.) Maybe you turned them into breakfast hash, or gave them a holiday glow with scallions. Whatever your spin, I want to hear about it.
💬 Reader prompt: Should we do a “Corn Glow Series” next? I’m dreaming up chili cornbread casserole, cornbread waffles, and maybe even cornbread-stuffed peppers.
Until then, may your cornbread be golden, your hot dogs juicy, your butter melty, your sour cream tangy, and your kitchen filled with laughter, love, and second helpings. Because at the end of the day, recipes like this aren’t just about cooking — they’re about celebrating the little joys that make life delicious.
And if you take nothing else from this post, let it be this: Easy Baked Corndogs aren’t just dinner, they’re a lifestyle. 🌭✨💛
