Creamy Italian Soup
Ingredients

- 1 onion diced
- 2 to 3 cloves, minced garlic
- 1 jar Marinara Sauce
- 1/2 lb Bow Tie Pasta
- 2 cups chicken broth
- 2 cups heavy cream or whole milk
- 2 14.5 ounce cans whole tomatoes
- 3 cups shredded Mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 cups Fresh Baby Spinach
- 4 tablespoons butter
Directions:

Cook the Pasta In a large pot with 6 cups of water, cook pasta according to package directions. Drain, rinse with cold water, and set aside.

Brown the Sausage In the same pot, heat 2 tablespoons olive oil. Add sausage, onion, and garlic; cook until sausage is browned and cooked through. Drain grease and set sausage aside.

Build the Broth In the same pot, add chicken broth, tomatoes, marinara sauce, and heavy cream. Bring to a slow boil, stirring constantly. Reduce heat to medium and simmer for 5 minutes.

Cheesy Goodness Add sausage mixture back to the pot along with butter, 2 cups mozzarella, and Parmesan. Simmer 10–15 minutes, stirring occasionally.

Final Touches Remove from heat. Stir in remaining mozzarella, spinach, and pasta. Serve immediately.
