Crack Open Your Day with Sausage Gravy Breakfast Casserole
This sausage gravy breakfast casserole is like waking up on a Sunday morning inside a big, cozy pillow fort—every bite is warm, fluffy, and utterly irresistible

Biscuits And Gravy Casserole
Mornings just got a whole lot more exciting. Picture this: golden, flaky biscuits nestled in a creamy custard of eggs and cheese, then smothered in a rich, peppery sausage gravy that’s been bubbling away with savory sausage and just the right amount of black pepper kick. It’s everything you love about biscuits and gravy—comfort food royalty—transformed into a show-stopping casserole you can bake, slice, and serve to happy, hungry faces.
Maybe you’ve spent weekends running to pancake houses or standing over a hot skillet, trying to get your gravy just right. Or maybe you’ve had those mornings when the only thing standing between you and breakfast is wrestling with cold cereal. Well, friends, say goodbye to kitchen panic.
This casserole is your sleepy-eye, just-roll-out-of-bed solution.
Best part? You assemble it the night before, tuck it into the fridge, and wake up to a golden masterpiece that’s ready to pop in the oven. While it bakes, you can sip coffee, scroll your favorite feed, or sneak in a few more snoozes. Whether it’s a holiday brunch, a weekend sleep-in, or you’re simply craving a bowl of pure, creamy happiness, this recipe has your back. Buckle up: breakfast will never be boring again.
Every time we go out for breakfast, I already know what I will be getting, Biscuits and Gravy!!
I had never attempted to make it into a casserole dish before now but now I’m wondering what took me so long! We had a house full when this came out of the oven and I had no problem convincing people to stay for dinner!

Biscuits And Gravy Casserole
This recipe is perfect for breakfast with your family around the kitchen table but would fit perfectly on a brunch buffet. It would be perfect for the holidays!
If you don’t have that many to feed you can cut the recipe in half! If you still have some leftover ( which I don’t think you will) it’s perfect for the next day!
Cooking Tips
• Use cold biscuits if you love texture: chilling slows down rising, giving you a heartier biscuit bite.
• Don’t skip the reserved sausage fat: those two tablespoons carry deep flavor and help thicken the gravy.
• Whisk flour into fat before adding liquid to avoid lumps. If you see lumps, press them against the side of the pan with a spoon.
• For extra creaminess, substitute half-and-half for whipping cream in the gravy.
• If your gravy is too thick, thin it with a splash of extra milk or broth. If it’s too thin, simmer a few minutes longer.
• Assemble the casserole the night before to let flavors marry—just cover and refrigerate, then bake in the morning.
• Keep an instant-read thermometer handy: the internal custard temp should read around 165°F when done.
• Avoid overbaking: cheese that browns too much can become rubbery. Golden spots are perfect.
• To reheat leftovers, bake at 350°F for 10 minutes or microwave individual portions for 1–2 minutes—gravy will rewarm nicely.
• Add a pinch of nutmeg or a few dashes of hot sauce to the gravy for a surprising flavor pop
Recipe Variations
• Herb Lover’s Casserole: Stir 1 tablespoon chopped fresh thyme and rosemary into the egg custard and gravy. Swap cheddar for Gruyère for a gourmet twist.
• Spicy Sausage Gravy: Use spicy breakfast sausage or add ½ teaspoon cayenne pepper and 1 teaspoon smoked paprika to the gravy for heat.
• Vegetable Mash-Up: Toss in 1 cup diced bell peppers, onions, or baby spinach when you scatter biscuits for extra color and nutrition.
• Country Ham & Cheddar: Replace breakfast sausage with diced country ham. Pick sharp cheddar or pepper jack cheese to complement the saltiness.
• Gluten-Free Friendly: Sub gluten-free flour in the gravy and use almond flour biscuits or your favorite GF biscuit dough.
• Southern Comfort: Swap half of the chicken broth for full-fat buttermilk to deepen tanginess in the gravy.
• Egg-Free Option: Skip the egg custard and layer biscuits, cheese, and gravy in alternating strata. Warm through until bubbly.
• Mini Muffin Version: Use a greased mini muffin tin, divide biscuit quarters, custard, cheese, and gravy into each cup for individual bites—perfect for brunch parties.
• Breakfast Sandwich Style: Bake biscuit and custard layer in a loaf pan. Slice like bread and sandwich gravy-kissed cubes between toasted biscuit halves with extra cheese.
• Dairy-Free Swap: Use coconut cream in the gravy and dairy-free milk. Choose dairy-free cheese to keep textures indulgent.

Instructions
1. Preheat & Prep
Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with nonstick spray or a thin coating of butter.
2. Make the Sausage Gravy
In a large skillet over medium heat, cook breakfast sausage until no pink remains and bits are crisp, about 8 minutes. Use a slotted spoon to transfer sausage to a bowl, reserving 2 tablespoons of rendered fat in the pan.
Sprinkle flour into the fat and stir constantly for 1–2 minutes to cook off the raw taste. Slowly whisk in milk and chicken broth, ensuring no lumps. Bring to a gentle simmer, whisking frequently until mixture thickens, about 5 minutes. Stir in whipping cream, cooked sausage, salt, and pepper. Simmer 2 more minutes, then remove from heat.
3. Assemble the Casserole Base
Open the can of biscuits. Pull each biscuit into quarters and scatter evenly across the bottom of the greased baking dish. Press pieces lightly so they form a rustic layer.
4. Whisk the Egg Custard
In a mixing bowl, whisk together eggs, milk, salt, paprika, garlic powder, and black pepper until frothy. Pour the egg mixture evenly over the biscuit pieces. Use a spatula to press the biscuits gently so they absorb the custard.
5. Add Cheese & Bake
Sprinkle shredded cheddar cheese over the top in an even layer. Bake uncovered for 25–30 minutes, or until the custard is set and the top is golden brown.
6. Finish with Gravy
Remove casserole from oven and let it rest 5 minutes. Gently poke holes in the top layer with a fork. Pour hot sausage gravy over the casserole, allowing it to seep into every nook. Garnish with chopped chives or parsley if desired. Serve warm.

Kid Tips
- Turn assembly into a game: let kids “decorate” the top with cheese and sprinkle bacon bits—everyone loves a personal touch.
- Provide mini whisks and measuring spoons so little chefs can help whisk eggs, measure spices, or stir the gravy roux (with supervision).
- Hide shredded cheese under the surface and challenge kids to find the “gooey treasure” in each bite.
- Offer safe tasks: older kids can crumble cooked sausage or tear biscuit rounds.
- Use fun cookie cutters to cut biscuit quarters into shapes (stars, hearts) before layering for extra giggles.
- Let kids customize their own bowls with toppings like sliced green onions, hot sauce, or diced tomatoes on the side.
- Teach temperature checks by letting them identify when the casserole top looks done: golden brown but not scorched.
- Make “mini me” casseroles in ramekins so each child has their very own breakfast masterpiece.
