Let’s talk about the kind of dinner that makes people stop mid‑scroll and say, wait, WHAT is that? Because this BBQ Pork Mac & Cheese is not your average weeknight meal. It’s smoky, it’s cheesy, it’s saucy, and it’s the kind of dish that makes you forget you even considered ordering takeout.

This isn’t just mac & cheese. It’s indulgent, it’s layered, it’s dramatic in the best way, and it’s the kind of recipe that makes you want to grab seconds (because one scoop is never enough). Pork shoulder brings cozy satisfaction, BBQ sauce swoops in with indulgence, cheddar adds sparkle, and that creamy béchamel base? That’s the mic‑drop moment.

Why this recipe is a keeper:

  • Effortless elegance — slow‑cooked pork + stovetop mac = magic.
  • Flavor fireworks — smoky pork + sticky sweet BBQ + sharp cheddar.
  • Family‑friendly — even picky eaters don’t stand a chance.
  • Make‑ahead friendly — reheats beautifully.
  • Instagram‑worthy — gooey cheese pulls deserve a close‑up.

It’s back to school for me and my family! Back to recipes that make my life easier. Here is something super easy and it didn’t take a lot of time. In fact, I used the crockpot for most of it! Luckily for me, Matt is willing to try just about anything that I make so here we go!

BBQ Pork Mac and Cheese Casserole

Ingredients

  • 2-pound pork shoulder
  • favorite bbq rub
  • Stubbs sticky sweet BBQ sauce
  • 1 pound macaroni noodles, cooked to al dente
  • 6 tablespoons salted butter
  • 4 tablespoons flour
  • 4 cups of milk
  • 3 cup shredded sharp cheddar cheese
  • 1 cup shredded swiss cheese

Directions

  1. Rub the outside of the pork with your favorite rub. I used Weber pork and chicken bbq rub. Place in the crockpot on low for 6 to 8 hours.
  2. Pull out of the crockpot and shred with two forks. Toss in favorite BBQ sauce. I used Stubbs Sticky Sweet.
  3. Preheat oven to 350 degrees.
  4. Melt butter in a skillet and add the flout and stir over medium heat until the mixture is lightly browned. 1 to 2 minutes.
  5. Add the milk and whisk out any lumps. Cook on medium-high heat until the sauce starts to thicken. About 6 minutes. Start to slowly add in cheese and whisk until smooth and melted. Turn off the heat and then add cooked pasta to the sauce and stir.
  6. Spray a clear dish and pour the mac and cheese into an 8×13 inch pan. Top with pork tossed in sauce.
  7. Bake for 20 to 25 minutes, until browned and bubbly.

💭 Final Thoughts

This BBQ Pork Mac & Cheese proves that comfort food doesn’t have to be complicated. It’s hearty, flavorful, and versatile enough to be a weekday staple, a family favorite, or a “just because” indulgence. Plus, it’s the kind of recipe that makes everyone smile — and isn’t that the best kind of cooking?

Here’s the thing about mac & cheese — it’s never just pasta. It’s the smell of cheddar melting, the joy of BBQ pork sizzling, the comfort of knowing you’ve got a dish that’s both playful and nostalgic. It’s the kind of recipe that makes you feel like you’ve pulled off a dinner miracle without breaking a sweat.

And this BBQ Pork Mac & Cheese? It’s a keeper. It’s savory, it’s hearty, it’s indulgent, it’s fun. It’s the kind of recipe that makes you feel like you’ve turned pantry staples into something restaurant‑worthy. It’s hearty enough to feed a crowd, flexible enough to adapt to whatever toppings you’ve got hanging out in the fridge, and comforting enough to become the dish your family requests again and again.

But what I love most is how recipes like this bring us together. Food has that magic — it’s not just about eating, it’s about sharing. It’s about swapping tips, laughing over cheese‑splattered counters, and building little traditions that make life tastier. It’s about the kids sneaking extra bites when you’re not looking, the friends who ask for seconds, and the quiet satisfaction of knowing you’ve created something that feels like home.

So here’s my challenge to you: make this dish, share it with your people, and then tell me your twist. Did you add jalapeños? Did you sneak in bacon? Did you double the cheddar just because you could? (No judgment — I’d be first in line for that version.) Maybe you turned it into mini ramekins for portion control, or gave it a holiday glow with cranberries. Whatever your spin, I want to hear about it.

💬 Reader prompt: Should we do a “Mac Glow Series” next? I’m dreaming up buffalo chicken mac, veggie ranch mac, and maybe even cheesy taco mac.

Until then, may your pork be smoky, your noodles tender, your cheddar melty, your swiss creamy, and your kitchen filled with laughter, love, and second helpings. Because at the end of the day, recipes like this aren’t just about cooking — they’re about celebrating the little joys that make life delicious.

And if you take nothing else from this post, let it be this: BBQ Pork Mac & Cheese isn’t just dinner, it’s a lifestyle. 🧀🥩✨
