Gnocchi is my favorite! If I ever come across a recipe with gnocchi in it , I immediately want to make it! Those fluffy little potato pillows make my heart sing!
This recipe doesn’t call for a lot of ingredients, matter of fact, you probably have most of them in your pantry. Easy to make, just a few ingredients and one pan! How can it get any better than that!

Baked Gnocchi
INGREDIENTS:
- 1 tablespoon olive oil
- 1 lb. ground beef
- 1 small onion, diced
- 3 to 4 cloves garlic, minced
- 1/4 cup apple cider vinegar
- 1 (24-ounce) jar marinara sauce
- 6 cups cooked gnocchi
- 1/4 cup freshly grated Parmesan
- 3 tablespoons chopped chives
- 8 ounces fresh mozzarella, torn into pieces
Baked Gnocchi
DIRECTIONS:
Preheat oven to 425 degrees F. Lightly oil a 9 x 13 baking dish or coat with nonstick spray.
Heat olive oil in a large skillet over medium-high heat. Add ground beef and onion, and cook until beef has browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat.
Stir in garlic until fragrant, about 1 minute.
Stir in vinegar, scraping any browned bits from the bottom of the pot.
Stir in marinara sauce. Bring to a boil; reduce heat and simmer until flavors have blended about 5 minutes. Stir in gnocchi, and Parmesan until well combined, about 1-2 minutes.
Spread gnocchi mixture into the prepared baking dish; top with mozzarella. Place into oven and bake until bubbly, about 20-25 minutes. Let stand for 5 minutes.
Serve immediately, garnished with chives, if desired.

Cooking Tips
- Preheat Perfectly Give your oven a full 15 minutes to hit a rock-solid 425°F. A properly preheated oven ensures that cheese crisps just right and the edges of the sauce caramelize for extra flavor.
- Use Room-Temp Ingredients Let your fresh mozzarella and cooked gnocchi sit at room temperature for 20 minutes before assembling. This helps them integrate seamlessly into the bubbling sauce without cooling it down.
- Drain Wisely After browning the ground beef, drain off excess fat but keep a tablespoon for flavor. It carries that savory depth into your garlic and onions.
- Scrape for Flavor When you add the apple cider vinegar, use a wooden spoon to scrape up the brown bits from the bottom of the skillet. Those bits are pure umami liquid gold.
- Layer Evenly Stir the gnocchi and Parmesan into the sauce just until coated—overstirring can break down those delicate dumplings. Then spread everything in an even layer before topping with cheese so each scoop is equally epic.
- Garnish Last-Minute Sprinkle fresh chives right before serving to preserve their bright color and oniony crispness.
- Let It Rest After you pull the bake from the oven, let it stand for at least 5 minutes. This short intermission lets the sauce thicken and cheese set, making slicing and serving a breeze.

Recipe Variations
- Spicy Sausage Swap
- Trade ground beef for hot Italian sausage (casings removed).
- Add a pinch of red pepper flakes to the vinegar step for extra heat.
- Chicken Pesto Twist
- Use shredded rotisserie chicken instead of beef.
- Swap half the marinara for basil pesto and layer it in swirls before adding mozzarella.
- Veggie-Packed Veg-Out
- Sauté mushrooms, bell peppers, and spinach after the onions and garlic.
- Use lentil or chickpea gnocchi for a protein boost.
- Vegan Victory
- Use plant-based ground “beef” and dairy-free mozzarella.
- Swap Parmesan for a sprinkle of nutritional yeast and add a drizzle of olive oil before baking.
- Four-Cheese Fiesta
- Mix 1/4 cup each of shredded mozzarella, provolone, fontina, and cheddar into the sauce before adding gnocchi.
- Top with a fifth cheese—fresh burrata—right when it comes out of the oven for a gooey crown
- Crispy Topping Treat
- Mix 1 cup panko breadcrumbs with 2 tablespoons melted butter, 1 teaspoon garlic powder, and 1 tablespoon chopped parsley.
- Sprinkle over cheese before baking for a golden crunch contrast.
- Mini Gnocchi Casserole Jars
- Portion the assembled bake into individual, oven-safe mason jars.
- Bake for 15–18 minutes and serve straight out of the jar for an adorable presentation.
- Leftover Lunch Upgrade
- Stir a splash of heavy cream into any leftovers before reheating to revitalize the sauce’s creaminess.

Final Thoughts
This Gnocchi Bake is the kind of recipe you’ll bookmark, dog-ear, and maybe even tattoo on your heart—because it’s that good. It’s a testament to the power of simple ingredients coming together to create something magical: pillowy gnocchi wrapped in savory beef and tangy marinara, crowned by melty mozzarella and fresh chives.
Don’t be surprised if you catch yourself daydreaming about this dish when you’re stuck in traffic or waiting in line at the coffee shop. It’s plate-licking, nap-inducing comfort at its finest. And the best part? There’s always enough to share—unless you choose not to. I won’t judge if you swipe the rest from the fridge at 2 a.m.
Meal-prep aficionados, take note: this bake reheats like a dream. Store individual portions in airtight containers for grab-and-go lunches. Pop them in the microwave for 2 minutes, or reheat in the oven at 350°F for 10 minutes to bring back that just-baked allure.
Hosting a dinner party? Serve this alongside a crisp Caesar salad and garlic-knotted bread for the ultimate carb carb triad. Pair with a chilled Pinot Grigio or a light-bodied Chianti to cut through the richness.
If you’re craving extra freshness, toss a handful of baby spinach into the sauce right before you stir in the gnocchi. It wilts down and disappears into the sauce, sneaking nutrients into every bite.
