This recipe was fairly easy and it made enough for us to eat and some to freeze and eat later. I’ve been trying to be more frugal and make what we need. I made these so we could have some left over for later.

We’ve been trying to make meals that make great leftovers. These turned out great and we can bake them and they are just as awesome they were to begin with. Like I said this is the first time using the air fryer so I let it cook a little too long before taking them out. I’m sure you will do better than me!

Air Fried Beef Taquitos

Ingredients

  • 2.5 pounds of chuck roast
  • 1 1/2 cups beef broth
  • 1 can of Dr. Pepper
  • 1/2 large yellow onion chopped
  • 3 cloves of garlic minced
  • 1 1/2 Tablespoons chili powder
  • 1/2 tablespoon ground cumin
  • 1 tablespoon salt
  • 1/2 teaspoon pepper
  • Juice of 2 limes
  • flour tortillas

Directions

  1. Mix together chili powder, cumin, salt and pepper. Dry rub the meat and sear the edges in a skillet on medium high heat.
  2. Place the meat and the remaining ingredients in the crock pot. Cook on low for 8 to 10 hours. When finished cooking pull the beef out of the crock pot and shred it.
  3. Place shredded meat and sprinkle a little cheese in the tortilla. Roll up tightly and place in the air fryer.
  4. Set your air fryer to 400 degrees. Cook for 8 to 12 minutes or until they are golden and crispy.

💭 Final Thoughts

These Air Fried Beef Taquitos prove that comfort food doesn’t have to be complicated. They’re hearty, flavorful, and versatile enough to be a weekday staple, a family favorite, or a “just because” indulgence. Plus, they’re the kind of recipe that makes everyone smile — and isn’t that the best kind of cooking?

Here’s the thing about taquitos — they’re never just snacks. They’re the smell of beef simmering, the joy of tortillas crisping, the comfort of knowing you’ve got a dish that’s both playful and nostalgic. They’re the kind of recipe that makes you feel like you’ve pulled off a dinner miracle without breaking a sweat.

And these Air Fried Beef Taquitos? They’re keepers. They’re savory, they’re crispy, they’re indulgent, they’re fun. They’re the kind of recipe that makes you feel like you’ve turned pantry staples into something restaurant‑worthy. They’re hearty enough to feed a crowd, flexible enough to adapt to whatever toppings you’ve got hanging out in the fridge, and comforting enough to become the dish your family requests again and again.

But what I love most is how recipes like this bring us together. Food has that magic — it’s not just about eating, it’s about sharing. It’s about swapping tips, laughing over salsa‑splattered counters, and building little traditions that make life tastier. It’s about the kids sneaking extra bites when you’re not looking, the friends who ask for seconds, and the quiet satisfaction of knowing you’ve created something that feels like home.

So here’s my challenge to you: make this dish, share it with your people, and then tell me your twist. Did you add jalapeños? Did you sneak in cheese? Did you double the lime just because you could? (No judgment — I’d be first in line for that version.) Maybe you turned them into mini taquitos for portion control, or gave them a holiday glow with cilantro. Whatever your spin, I want to hear about it.

💬 Reader prompt: Should we do a “Taquito Glow Series” next? I’m dreaming up chicken taquitos, veggie taquitos, and maybe even breakfast taquitos.

Until then, may your beef be juicy, your tortillas crispy, your lime zesty, your garlic fragrant, and your kitchen filled with laughter, love, and second helpings. Because at the end of the day, recipes like this aren’t just about cooking — they’re about celebrating the little joys that make life delicious.

And if you take nothing else from this post, let it be this: Air Fried Beef Taquitos aren’t just dinner, they’re a lifestyle. 🌮✨
