TIPS AND TRICKS

  • PROTEIN: I used sausage for my casserole but if you don’t love sausage, you can use a different meat. I think ham, bacon or leave out the meat, it will be fabulous!
  • TATER TOTS: My tater tots were frozen. If your tots are thawed, cut down on the time a little.
  • VEGETABLES: This recipe calls for a green bell pepper, you can leave out the pepper or you can even add a couple of handfuls of baby spinach.
  • MAKE AHEAD: This works well if you make it the night before or you can cook it right away.
  • STORAGE: If you have leftovers, place it in an airtight container or you can freeze it up to 2 months.

Tater Tot Casserole

Ingredients

  • One 16-ounce bag frozen Tater Tots
  • cooking spray
  • 1 pound breakfast sausage
  • 1 medium onion, very finely diced
  • 1 cup milk
  • 1/2 cup half-and-half
  • 4 large eggs
  • 1 green bell pepper, very finely diced
  • 2 cups grated Cheddar cheese
  • 1 cup grated Monterey jack cheese
  • salt and black pepper

Instructions

  1. Preheat the oven to 350 degrees. Spray baking dish with cooking spray. Line up the tater tots in dish.
  2. In a large skillet over medium heat. Add the sausage and onion and cook, breaking the sausage up with a wooden spoon, until browned and cooked through, 8 to 10 minutes. Set aside to cool slightly, then sprinkle it over the tater tots.
  3. In a large bowl, mix the milk, half-and-half, salt, pepper, eggs, bell pepper, half of both cheeses and some salt and pepper. Pour over the tots and sausage mixture, then top with the rest of the cheese.
  4. Cover with foil and refrigerate overnight. Bake, covered, for about 25 minutes. Remove the foil and continue to bake until the cheese is brown and bubbly and the casserole is cooked through, another 20 to 35 minutes. Cut into squares and serve.
