I’ve been craving peanut butter bars lately, which is odd, I mean I like them so it’s not that I don’t like them. I just haven’t really craved them, so I made this big pan thinking my kids would love them and then licked off the chocolate topping and then didn’t eat the rest.

I was a little surprised by that. I thought it was kind of funny. Since no one else loves them the way I do right now, I’m going to freeze them and eat them slowly until my due date. These will knock your socks off, apparently especially the frosting is good just ask my kids. 

 

 

The Best Peanut Butter Bars

Ingredients

Bars

  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 cups creamy peanut butter, divided
  • 2 large eggs
  • 2 teaspoons vanilla
  • 2 cups all-purpose flour
  • 2 cups old-fashioned rolled oats
  • 1 teaspoon salt

Frosting

  • 1/2 cup salted butter, softened
  • 3 cups powdered sugar
  • 1/4 cup cocoa powder
  • 1/2 cup heavy whipping cream
  • 2 teaspoons vanilla

Directions

  1. Preheat oven to 350°F. Spray a cookie sheet (13″x18″) with baking spray.
  2. Beat the butter, granulated sugar, brown sugar, and 1 cup of the peanut butter in a mixer until creamy and light. Add eggs and vanilla extract, then beat again, scraping the bottom and sides of the bowl.
  3. Add the flour, oats, baking soda, and salt. Mix just until combined. Spread the peanut butter oatmeal cookie dough into the prepared pan with a spatula. Bake for 15-17 minutes until golden brown around the edges and barely set in the middle. Do not overbake.
  4. While the peanut butter oatmeal cookie base is still hot, melt the remaining cup of peanut butter in the microwave in a microwave safe bowl for 1 minute, then drizzle over the top of the bars, spreading it into an even layer with a spatula or knife. Let cool completely until the peanut butter has firmed up. 
  5. Make the chocolate frosting by beating the butter, powdered sugar, cocoa powder, heavy cream, and vanilla extract in a large bowl until smooth. Spread in an even layer over the cooled bars, then cut into squares.
