How to Peel Tomatoes

We have started canning at our house and I hate having an extra pot of water just for peeling the tomatoes. Just more mess and cumbersome in my opinion. I hate blanching them with a passion honestly. When we decided to make salsa I knew we would have to peel them. I almost didn’t do it and gave the tomatoes to someone else. Then we decided to take a different approach.

First, you cut the tomatoes in half and place them cut side down on a cookie sheet and squish them in real tight. Then you broil them for 6 to 8 minutes or until the skin starts to wrinkle on the tomatoes.

Then pull them out of the oven and let them cool before trying to pull the skin off. It tends to pull right off. Then we quartered them and got rid of all off the seeds.

Hot tip: I didn’t want to cut all the peppers and what not so I put them in a food processor. However, I got jalapeno all over my hands which then got on my lips and some splattered and got on the base of my nostril and I wanted to die (dramatic much, yes I am). I read a couple of options, of how to heal it quick and sour cream seems to be the one that worked. I put it on all the burning places and it healed right up. You’re welcome!
