This easy Potato Soup with bacon is truly the best! It’s quick and easy to make on the stovetop, it’s nice and creamy, and it’s always so cozy and comforting and delicious.


Easy Creamy Potato Soup with Bacon


This easy creamy potato soup with bacon recipe has been my tried-and-true, back-pocket, all-time-favorite. It’s perfectly rich and creamy, it’s full of flavor (because bland potato soup is the worst), it’s easy to adapt to be vegetarian and/or gluten-free , and it is always, always a crowd fav. I promise it won’t let you down.

there are so many ways to customize this soup! Some possibilities could include:

  • Make it vegetarian: Leave out the bacon. And in its place, add in 2-3 teaspoons Red Pepper flakes seasoning for a bit of extra flavor. (Plus, use butter or olive oil in place of the bacon grease.)
  • Make it gluten-free: You could either:
    • omit the flour, and instead, whisk a tablespoon of cornstarch into the cold milk and then add it to the soup
    • don’t worry about cornstarch/flour at all, and instead, puree half of the soup to thicken it
  • Lighten it up: Feel free to:
    • omit the flour and 2 tablespoons of grease/butter, and instead, puree half of the soup to thicken it
    • use skim milk
    • use turkey bacon (although you may need to add in a little extra olive oil or butter to sauté the veggies)


Easy Creamy Potato Soup with Bacon


  • 6 slices thick cut bacon diced
  • 1 small yellow onion diced
  • 4 stalks of celery diced
  • 3 carrots peeled and diced
  • 3 to 4 cloves garlic minced
  • 1/3 cup flour
  • 3 cups chicken stock
  • 4 to 5 potatoes peeled and diced
  • 2 cups milk
  • 1/2 cup plain Greek yogurt or sour cream
  • salt and pepper to taste
  • shredded cheddar cheese for topping
  • diced green onions for topping
  • bacon pieces for topping


Easy Creamy Potato Soup with Bacon


  • In a large heavy bottomed stock pot, cook the bacon until just crispy.
  • Add in the onion, celery, carrots, and garlic.  Cook until the vegetables are soft. About 5 to 7 minutes.
  • Stir in the flour into the vegetable mixture.  Then very slowly add the chicken stock.  It works best to add a few tablespoons at a time, whisking throughout in between. This should take about two minutes at the most.
  • Bring the mixture to a boil and add in the potatoes.  Turn down the heat to a simmer, stirring regularly, and cook until the potatoes are fork tender. About 20 to 30 minutes. Make sure the heat is very low. If it is too high, too much of the liquid will evaporate.
  • Stir in the milk, yogurt and allow the milk to cook through, about 1 to 2 minutes.  Top with cheddar cheese, bacon, and diced green onions. Enjoy!
