Mini Cadbury Egg Cookies

 

I have loved Easter for one reason and one reason only for the majority of my life. Mini Cadbury Eggs. Honestly, I want to shove them in literally as many desserts as I can. Cookies are obviously the best option for that. I would be lying though if I didn’t admit that when we had kids it made Easter a thousand times better.

Literally every single big, little holiday is amazing now. I love to think of all the ways to make each holiday great. Grey loves to help me make cookies now and my life is complete. We had so much fun making these last night! Anyways they turned out great, you should try them!

 

 

Ingredients

  • 1 cup butter
  • 1 cup brown sugar, packed
  • 1 cup white sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 3 cups all-purpose flour
  • 1 bag mini Cadbury eggs

 

 

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Dissolve baking soda in hot water. Add to batter along with salt. Stir in flour, chocolate chips, and nuts. Drop by large spoonful onto un-greased pans.
  3. Bake for about 15 minutes in the preheated oven, or until edges are nicely browned.

I love my family! Honestly, it is so fun to see my kids enjoy each other’s company and take a moment to act like a kid! My youngest daughter is 13 years old and so the regular Easter egg hunts aren’t cutting it anymore.
 
 
 
Plus, since I have a wide age range between my kids, I love to find different ways for them to make memories and build that bond. We still have a regular Easter egg hunt for the grandkids, but let’s be honest, no one ever wants to grow up when they are around their parents!
