Cheesy Bacon Butternut Squash! With the squash and bacon combination, it is a full meal! The squash is so buttery and then you take a bite of bacon and it’s over the top! Your family will be taking seconds of this puppy!

 

Cheesy Bacon Butternut Squash

 

One of the best things about Summer is all the fresh produce from the gardens. I don’t know what it is but that’s all I want to eat in the Summer months. In the quest to come up with new keto-friendly recipes so we can stay true to our fitness journey, this little gem was discovered.

My husband isn’t a big fan of squash but he agreed to try this dish. It was so good! Again, this is perfect even if you aren’t trying to do keto.

 

Cheesy Bacon Butternut Squash

Ingredients

2 lb. butternut squash, peeled and cut into 1″ pieces
1/2 stick of butter, cubed
2 cloves garlic, minced
salt, and pepper to taste
1/2 lb. bacon, chopped
1 1/2 c. shredded mozzarella
1/2 c. grated Parmesan
Chopped fresh parsley, for garnish

 

 

Directions

Preheat oven to 425°. In a large baking dish, toss butternut squash with cubed butter, and garlic. Season with salt and pepper, then scatter bacon on top.
 
Bake until the squash is tender and the bacon is cooked through 25 to 30 minutes. It might take longer depending on the size of your squash.
 
Remove baking dish from oven and top with mozzarella and Parmesan. Bake for another 5 to 10 minutes, or until the cheese is melty.
 
Garnish with parsley and serve warm.
