My family loves guacamole! We eat it on chips and on many of our recipes that we create! It just adds that extra little something to put that dish over the top! The other day while I was working on the blog, I was listening to the Today show. A chef was sharing different recipes and talked about a apple & pomegranate guacamole. She had my attention at that point! So I decided that I wanted to create my own and see if it would be something that my family would like.
When I went to the store I couldn’t find any pomegranates, so I went to my alternative that I use when I can’t find them, dry pomegranates! Yes, my husband was worried that it was going to be a crazy combination. He helped me every step of the way! You guys, I really love this! The crisp flavor of the apple and pomegranate was a great combination with the avocado.
- 4 ripe avocados
- 1 fresh lemon
- 8 dashes of hot sauce
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1/2 green apple, chopped
- 1/3 cup pomegranate seeds, fresh or dried
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tomato, chopped
- Cut the avocados in 1/2, remove the pits, and scoop the flesh out of the shells into a large bowl. Immediately add the lemon juice, hot sauce, salt, and pepper. Mash it coarsely.
- Add the onion, garlic, green apple, and pomegranate seeds. Toss well. Add the tomatoes and mix well.
