Banana Bread Muffins

I love gooey banana bread but when I make it I usually eat the entire loaf myself, so this time I decided banana bread muffins might be a better idea because then I can limit myself to a few.

They were so good though that well… they got eaten pretty quickly!

INGREDIENTS

  • 1 cup white sugar
  • 1/2 cup vegetable oil
  • 1 egg
  • 3-4 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Cinnamon

DIRECTIONS

  1. Preheat oven to 350 degrees F. Place muffin cups in a muffin tin, or grease with a little butter.
  2. Mix sugar, oil, and egg until creamy and light yellow in a bowl. Add bananas. Add flour, baking soda, and salt. Spoon the batter into the muffin tin.
  3. Bake for 30 to 40 minutes, until a toothpick poked in a center muffin, comes out clean.
  4. Butter the tops of the muffins and sprinkle with a little cinnamon and sugar
