I love gooey banana bread but when I make it I usually eat the entire loaf myself, so this time I decided banana bread muffins might be a better idea because then I can limit myself to a few. They were so good though that well… they got eaten pretty quick!
- 1 cup white sugar
- 1/2 cup vegetable oil
- 1 egg
- 3-4 ripe bananas, mashed
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- Preheat oven to 350 degrees F. Place muffin cups in muffin tin, or grease with a little butter.
- Mix sugar, oil, and egg until creamy and light yellow in a bowl. Add bananas. Add flour, baking soda, and salt. Spoon the batter into the muffin tin.
- Bake for 30 to 40 minutes, until toothpick poked in center muffin comes out clean.
- Butter the tops of the muffins and sprinkle with a little cinnamon and sugar
