Banana Bread Muffins

I love gooey banana bread but when I make it I usually eat the entire loaf myself, so this time I decided banana bread muffins might be a better idea because then I can limit myself to a few. They were so good though that well… they got eaten pretty quick!





  • 1 cup white sugar
  • 1/2 cup vegetable oil
  • 1 egg
  • 3-4 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Cinnamon





  1. Preheat oven to 350 degrees F. Place muffin cups in muffin tin, or grease with a little butter.
  2. Mix sugar, oil, and egg until creamy and light yellow in a bowl. Add bananas. Add flour, baking soda, and salt. Spoon the batter into the muffin tin.
  3. Bake for 30 to 40 minutes, until toothpick poked in center muffin comes out clean.
  4. Butter the tops of the muffins and sprinkle with a little cinnamon and sugar
