Grilled Beef with Beets and Danish Blue Cheese! It’s no secret that I like to cook, in fact, I’m always trying to unlock my inner chef!
Who doesn’t love a good steak hot out of the pan? I know I do, and this grilled rib eye with beets and delicious Castello Danish Blue Cheese totally hits the spot.
Castello® cheeses are creatively crafted and always made with natural ingredients and great attention to detail. Castello offers three varieties of cheese: Havarti cheeses, Blue cheeses, and Crème cheeses. We tried the Havarti cheese last night and it was also delicious!
Back to the recipe… This recipe is not too tricky to make and since blue cheese has always been a favorite in our family, this recipe is definitely a keeper.
Start by preheating your oven to 425 degrees. Get a pot of salted water boiling on the stovetop and add your baby potatoes, boil for 10 minutes. Then peel the skin off, toss in olive oil and put on top of parchment paper, and bake in the oven for 10 minutes.
Your beets can cook at the same time in the oven for 10 minutes after you slice them into thin strips and sprinkle them with salt.
Once your potatoes and beets are in the oven, get ready to cook your steak. You can either grill it or fry it. I chose to fry it. First, salt and pepper your steak, then add it to your screaming hot skillet with a little olive oil and butter. For a medium-rare steak, cook on high for 2 minutes, then flip and cook for another 2 1/2 minutes on medium heat.
After your steak is cooked, cover it with tin foil and let it rest while you make your sauce. Start your sauce by browning your butter, add shallot, and a few finely chopped walnuts. Then add a little rosemary and your Castello Danish Blue Cheese.
Now toss your beets into your sauce and garnish your perfectly cooked steak with it. Serve alongside your roasted potatoes!
