Chicken Broccoli Rice Casserole! Dinner for tonight! This is quick, easy and delicious. You could throw your leftover turkey into this instead of chicken. It will be just as delicious.

Matt and I enjoyed this meal the other night, it was kind of nice because I came home and this only took 20 minutes to make and we loved it!

Chicken Broccoli Rice Casserole

1 tablespoon Olive oil
1 small onion chopped
2 chicken breast, cubed
5 garlic cloves, minced
3/4 cups rice
1 can cream of chicken soup
3 cups chicken broth
1 1/2 cups broccoli florets
1 1/2 cup cheddar cheese
salt and pepper to taste

 

Directions

1. Heat the olive oil in a dutch oven skillet. Add chopped onion, garlic, and cubed chicken. Cook on medium heat for a few minutes until chicken starts to brown a bit. Use salt and pepper to taste.
2. Add rice, cream of chicken soup, and chicken broth. Cook over medium heat until the rice is fully cooked. Should be about 15 minutes, stirring occasionally to make sure the rice doesn’t stick to the pan.
3. Once the rice is cooked add half the cheese and the broccoli florets and continue cooking for 2 more minutes until broccoli softens a bit. Sprinkle the remaining cheese and place the skillet under the broiler for minutes, just until it melts and starts to brown a bit.
