Papa a la Hauncaina Peruvian Yellow Potato Sauce
Yes, my son, Zac, is at it again! I love that my boys like to cook as much as my daughters. Zac is a little bit more daring than I would be at trying international recipes but I’m so glad he is! This is so good!!!! You need to try this and you will be glad you did.
1 medium yellow onion, diced
2 cloves of garlic, minced
1 jalapeno (deseeded) If you like it hot, leave the seeds!
3 egg yolks of hardboiled eggs
10 ounce Queso Fresco
1/3 cup evaporated milk
2 Tablespoons Tumeric
1/3 cup vegetable oil
salt and pepper, to taste
- In a large skillet, sauté onion, in 1 Tablespoon of oil until the onion is soft. Add the turmeric, garlic, and jalapeno, and sauté for 5 to 10 minutes.
- Put all the ingredients in the blender or food processor, and blend until smooth. It should be thin enough to pour, but still a little thick.
- Add more water or evaporated milk if it’s too thick.
- Serve over cooked potatoes that have been sliced.
