Chocolate Stuffed Cookie Dough Cookies

I love making new treats when I’m doing a Personal Progress Activity. I don’t know about your family but my girls LOVE anything cookie dough, and when the girls at Young Women’s found out the treat involved cookie dough, I had happy girls!! This recipe is so delicious and so rich, you will love it. Simple to make but will be a show stopper.
1/2 cup butter, softened
1/2 shortening
2 eggs
2 teaspoon vanilla
3/4 cup cocoa powder
2 cups flour
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
Cookie Dough Filling:
1/2 cup butter, softened
2/3 cup of brown sugar
2 teaspoon vanilla
1 cup flour
2 Tablespoons milk
1/2 cup mini chocolate chips

  • Preheat oven to 350 degrees and line your cookie sheets with parchment paper, or spray with non stick spray.
  • Combine butter, shortening and sugar, until light and fluffy.
  • Add the eggs, one at a time, beating after each egg. Add vanilla and mix well.
  • Combine cocoa powder, flour, cinnamon, baking soda and baking powder in a separate bowl and then add to the butter mixture. Mix well.
  • Scoop cookie dough and roll the dough into balls with your hands. Press down gently and lay cookies onto the sheet, about an inch apart.
  • Bake for 8 to 9 minutes and cool completely.
  • Cookie Dough: Beat butter and sugar together for a couple of minutes, until light and fluffy. Add vanilla and milk, mix well.
  • Mix in the flour and fold in the chocolate chips.
  • Make sure the cookies are cooled before adding the filling and making them sandwiches.
