Shrimp and Sausage Gumbo

Imagine my surprise when (after a really long day of teaching dance, babysitting, and young women’s) I come home to this delicious dinner waiting for me! Created by my hubby! Oh man, this guy is a keeper! Not only does it look delicious, but it was so freaking good! I was starving and I gobbled it down and asked for seconds!
Here is Mikey’s recipe for this delicious creation!
Shrimp and Sausage Gumbo
2 T olive oil
1 onion, finely chopped
3 cloves of garlic, minced
1/2 pound of sausage
20 cherry tomatoes, chopped
1/2 red bell pepper, chopped
2 t. Cayenne Pepper (Use more or less depending on how much you like the heat!)
1 t. Chili Powder
1 t. Italian Seasoning
1 t. Cajun Seasoning McCormick
1 T. Chicken Bouillon
1 T. Ketchup
1 Cup of water
1/2 pound of raw shrimp
2 cups of cooked rice

Directions: Sauté the onions in the olive oil in a heavy pan over medium heat until they are starting to get soft, add the garlic and sauté until fragrant. Brown the sausage with the onions and garlic. Add the tomatoes and the red peppers, ketchup, and spices. Add your water and let it simmer on low for an hour. 5 minutes before serving, add shrimp and cook it through. Serve over rice.
