I know I’m not re-inventing the wheel on this one, but sometimes we just need a little inspiration right? I LOVE pumpkin pie, but I don’t need a whole pumpkin pie sitting around at my house, so these little bites are just what I need to get my fix without going crazy and eating like it’s Thanksgiving! Mini Pumpkin Pie Bites 1 sheet of ready-made pie crust. 1 small can of pumpkin pie filling. Whip cream Directions: Roll out pie crust. Use a canning lid to cut out circles for the mini crusts. Spray mini cupcake tin with cooking spray. Push crust into the cupcake tin. Fill with pumpkin filling. Bake at 350 degrees Fahrenheit for about 13 minutes, or until the crust is golden brown. Let them cool in pan. Gently use a butter knife to get them out. Serve topped with whipped cream and a sprinkle of cinnamon or nutmeg. It’s a little ridiculous how easy this is.
