I love that Grey loves the citrus flavors these days! They are the absolute best! Lime is my favorite flavor for slushies, but I had never done a lime cake before. This turned out perfect with the basic cream cheese frosting. I didn’t do this cake in the typical shape I would normally do.
We had a six year old who needs a Yoshi cake and this was the easiest idea for Yoshi that I could come up with. A Yoshi egg that looks cool but is fairly simple to execute. The bottom I made cake Rice Krispies so that I could have it maintain it’s shape and I pressed them into a greased bowl.
Then I popped them out so that they could dry and harden in the base of the egg shape. We created a stand for the cake to make sure that it wouldn’t roll over night. Then we stacked the cake on top and gave it a little extra structure using straws and cardboard cake circles.

Ingredients
Cake
- 2 cups all purpose flour
- 1 1/2 cup sugar
- 3/4 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 3 eggs
- 2/3 cup vegetable oil
- 2/3 cup fresh lime juice
- 3/4 cup sour cream
Frosting
- 1 stick of salted butter, softened
- 1 8 oz block of cream cheese, softened
- 1 teaspoon vanilla
- 4 cups of powdered sugar
Directions
- Prep the Pans
- Preheat oven to 350°F (175°C).
- Grease and flour two 8-inch cake pans or three 6-inch pans.
- Mix the Dry Ingredients
- In a stand mixer bowl, combine flour, sugar, baking powder, baking soda, and salt.
- Add the Wet Ingredients
- Add eggs, vegetable oil, and fresh lime juice. Beat until smooth.
- Add the Sour Cream
- Mix in sour cream until batter is silky and lump-free.
- Bake
- Divide batter evenly between pans.
- Bake for 20–25 minutes, or until a toothpick inserted in the center comes out clean.
- Cool & Layer
- Let cakes cool completely.
- Split each layer into two for extra frosting layers (optional but highly recommended).
- Make the Frosting
- Beat butter and cream cheese until smooth.
- Add vanilla, then gradually mix in powdered sugar until fluffy.
- Assemble
- Frost between layers, then cover the top and sides.
- Chill for 20 minutes before slicing for cleaner cuts.
