Best part? You whip it up in one pan, no candy thermometer or complicated steps required. Just popcorn, butter, brown sugar, cinnamon, and a touch of vanilla for depth.
Trust me, once you try it, you’ll never settle for store-bought caramel corn again. This recipe is downright addictive and utterly foolproof.
My cute hubby, Mikie, needed a treat for his work luncheon the other day. I love when he needs a treat because it gives me a chance to try something new. the problem is that he has an hour commute to work. As we were going through options, he kept coming up with reasons that it wouldn’t work with the commute.
Finally, we decided to make some gourmet popcorn. It’s easy to carry and not so fragile that you are afraid it won’t make it to where you need to go. Seriously, it’s amazing how simple popcorn can be transformed into something so divine!
The great thing is that it’s fabulous for any occasion. Tonight, I think I might make a batch to share with some neighbors! Warning! You will not be able to stop eating this popcorn, once you get started!

Cinnamon Caramel Popcorn
Ingredients
• ½ cup popping corn kernels (or about 12 cups popped popcorn)
• ¼ cup unsalted butter (half a stick)
• ½ cup brown sugar, packed
• 2 tablespoons light corn syrup or honey
• 1 teaspoon ground cinnamon
• ¼ teaspoon salt
• ½ teaspoon pure vanilla extract
• Pinch of baking soda (optional, for extra fluffiness

Instructions
1. Place a large, heavy-bottomed pot over medium heat. Add 2 kernels of popcorn and a teaspoon of oil. Cover and listen for the “pop pop” to know the oil is hot.
2. Once those test kernels pop, dump in the rest of the ½ cup kernels. Cover and gently shake the pot back and forth so the kernels heat evenly. Keep the lid slightly ajar to let steam escape, keeping your popcorn crisp.
3. When popping slows to 2–3 seconds between pops, remove the pot from heat and transfer popcorn to a large bowl. Discard any unpopped kernels.
4. In the same pot, melt butter over medium-low heat. Stir in brown sugar, corn syrup, cinnamon, and salt. Keep whisking until the sugar dissolves and the mixture bubbles gently, about 2 minutes.
5. Remove from heat and immediately whisk in vanilla extract and baking soda if using. The baking soda creates tiny air pockets in the caramel, giving it a lighter texture.
6. Quickly pour the hot caramel over the popped corn. Use a heat-proof spatula or wooden spoon to gently fold, coating every flake and cluster in that glossy, cinnamon-kissed caramel.
7. Let the popcorn cool on a parchment-lined baking sheet for 5–10 minutes. The caramel will set as it cools, leaving behind satisfyingly crunchy clusters.
8. Once completely cool, break into bite-sized pieces and transfer to a serving bowl. Dive in immediately or store in an airtight container for later.

Cooking Tips
- Use a heavy-bottomed pot with a tight-fitting lid to ensure even heat distribution and prevent burnt kernels.
- Keep the lid slightly vented when popping to let steam escape—this keeps popcorn crisp instead of soggy.
- Stir the caramel constantly once it starts bubbling to avoid scorching the sugar. A silicone spatula is your best friend here.
- Work quickly when coating the popcorn; caramel sets fast. Have your bowl and spatula ready before you finish the sauce.
- Line your work surface with parchment paper or a silicone baking mat for easy cleanup and to prevent sticking.
- For extra crunch, bake the coated popcorn on a parchment-lined sheet at 250°F for 10–15 minutes, stirring halfway through.
- Let the kettle corn cool completely before storing to lock in that snap-crackle goodness.

Recipe Variations
- Salted Caramel Crunch: Sprinkle flaky sea salt over the popcorn immediately after coating for a sweet-and-salty sensation.
- Spicy Cinnamon Kick: Add ¼ teaspoon cayenne pepper to the caramel mixture for a surprising heat boost.
- Maple Cinnamon Pop: Swap corn syrup with pure maple syrup for a richer, woodsy flavor profile.
- Chocolate Drizzle Delight: After the popcorn cools, drizzle melted dark or white chocolate over the top and let set.
- Pumpkin Spice Twist: Stir in ½ teaspoon pumpkin pie spice to the caramel for fall vibes in every bite.
- Nutty Cluster Pop: Toss in ½ cup chopped pecans or almonds along with the popcorn before coating to create irresistible clusters.
Kid Tips
- Turn your kitchen into a “popcorn lab” and let little chefs time how fast they can shake the pot (supervised, of course).
- Create a popcorn topping bar with cinnamon sugar, mini-chocolate chips, sprinkles, and grated parmesan for kids to customize their bowls.
- Use mini snack bags and let kids decorate them with stickers for grab-and-go movie night treats.
- Encourage safe scooping by using small ladles or scoops instead of hands, teaching portion control and hygiene.
- Make it a game: hide a few marshmallows in the popcorn and challenge kids to find them all.

- Freeze leftover clusters in zip-top bags for up to two weeks—pop a handful into the microwave for a warm treat anytime.
- Experiment with different sugars like demerara or coconut sugar for nuanced depth.
- Try drizzling caramel on plain popcorn before adding cinnamon for a lighter, more evenly coated result.
