Smore Ice Cream Pops
🍫🔥🍦 S’more Ice Cream Pops — Creamy, Toasty, Summer‑Perfect Magic on a Stick
Let’s talk about the kind of dessert that doesn’t just sit in the freezer — it calls your name. The kind that whispers, “Just one more,” even though you and I both know it’s never just one.
These S’more Ice Cream Pops are exactly that kind of treat. They’re creamy, dreamy, chocolatey, marshmallow‑y, nostalgic, and unapologetically irresistible. They’re the kind of dessert that makes your family wander into the kitchen asking, “What smells so good?” even though you literally just melted marshmallows.
This recipe is a celebration of simple ingredients doing the absolute most:
- Half & half + heavy cream for that velvety, rich ice cream base
- Mini marshmallows that melt into gooey, toasty magic
- Vanilla for that classic ice cream warmth
- Dixie cups + sticks for that nostalgic, homemade popsicle vibe
- Chocolate + graham cracker add‑ins (if you want to go full s’mores mode)
It’s the kind of dessert that works for summer BBQs, pool parties, camping nights, birthday parties, after‑dinner treats, or those “I need something cold and sweet right now” moments.
Why these ice cream pops deserve a permanent spot in your rotation:
- They’re EASY — no fancy equipment
- They’re FUN — kids love helping
- They’re CUSTOMIZABLE — add chocolate, graham crackers, sprinkles
- They’re MAKE‑AHEAD FRIENDLY — freeze and forget
- They’re INSTAGRAM‑READY — cute, drippy, summery perfection
💬 Reader prompt: Are you team “extra marshmallow swirl” or team “extra chocolate chunks”?
We are an ice cream kind of family and in the summertime, it feels like the perfect time to try new recipes! You can’t go wrong with homemade ice cream and s’mores??? Right???
This recipe looks so fancy and as you slaved over the stove for hours and the truth is, it’s super simple! My family thought they were better than Drumsticks and they love them!
Smore Ice Cream Pops
Ingredients:
Ice Cream
2 cups half and half
1- 10-ounce bag of mini marshmallows
2 cups heavy cream
2 Tablespoons vanilla
Small Dixie cups
woodcraft sticks
Directions:
- In a large pan, combine the half and half with the marshmallows. Cook on low heat, stirring constantly until the marshmallows are completely melted. Remove from the heat and let cool for a couple of minutes.
- Place in the fridge to cool for 20 to 30 minutes, until chilled and slightly thickened. If you leave it too long, it will just be harder to work with.
- In the meantime, whip heavy cream until you have peaked. Fold the cooled marshmallow mixture and add vanilla. Stir until everything is combined.
- Set out small paper cups, we used Dixie cups, and scoop ice cream into the cups. Push ice cream down to remove any air pockets. Place a popsicle stick into the middle of the pop, almost to the bottom. Place paper cups on a cookie sheet and place into the freezer.

💭 Final Thoughts
These S’more Ice Cream Pops are everything you want in a summer dessert: creamy, sweet, nostalgic, fun, and comforting. They’re the kind of recipe that brings people together, sparks conversation, and makes everyone feel like they’re part of the fun.
Here’s the thing about ice cream pops: they’re never just dessert. They’re an experience. A vibe. A whole mood. They’re the kind of treat that invites you to slow down, savor, and enjoy. They’re nostalgic, playful, and endlessly adaptable — the perfect canvas for creativity in the kitchen.
And these S’more Ice Cream Pops are the kind that become a tradition. The kind your family requests again and again. The kind you make for summer nights, BBQs, camping weekends, or “just because it’s hot outside” moments.
But what I love most is how recipes like this build community. They bring people together around the table, spark laughter, inspire creativity, and remind us that food is more than fuel — it’s connection. It’s joy. It’s the little moment in the day when everyone pauses, gathers, and enjoys something delicious together.
So here’s your mission: make these pops, share them with your people, and then tell me your twist. Did you add chocolate Did you torch the marshmallows Did you double the vanilla (I support this fully.)
💬 Reader prompt: Should we do a “S’mores Series” next — brownies, cookies, bars, or milkshakes
Until then, may your pops be creamy, your marshmallows gooey, your chocolate melty, your freezer full, and your kitchen filled with laughter, love, and second helpings. Because at the end of the day, recipes like this aren’t just about cooking — they’re about celebrating the little joys that make life delicious.
And if you take nothing else from this post, let it be this: S’more Ice Cream Pops aren’t just dessert — they’re a lifestyle. 🍫🔥🍦
