Berry French Toast Casserole
Berry-burst overnight French toast bake: breakfast confetti in a 9×13
Because sometimes you need a brunch that does the most… while you do the least.

Berry French Toast Casserole
Picture this: it’s a sun‑splashed morning, the house smells like a bakery fell in love with a berry patch, and all you had to do was preheat the oven and make coffee. That’s the energy of this Berry‑Burst Overnight French Toast Bake—a golden, custardy, vanilla‑cinnamon dream topped with a fireworks display of strawberries, blueberries, and raspberries.
This is the kind of recipe that loves you back. You tear up bread, whisk a lush custard, tuck it in for an overnight soak, and the next day, it practically vaults out of the oven shouting “TA‑DA!” It’s brunchboard‑worthy for guests, easy enough for lazy weekends, and magical for holidays when you need a no‑stress showstopper. Serve it warm with maple syrup, yogurt, or powdered sugar and pretend you planned this level of fabulous all week.
I love this time of year, when the fresh berries start showing up in the grocery stores! They are so bright and full of flavor and I want to make every recipe that will showcase their goodness.
Back in the day, I used to only make this casserole around Christmas, but it has become one of my favorite go to’s. I have made it for cheerleader team luncheons, breakfast, dinner, birthday’s, and parties. It makes things so much easier. You throw it together the night before and then you can throw it in the oven, right before you need it. I love you, French toast casserole!

I used strawberries, raspberries and blueberries, but go ahead and play with the fruit you use. You could go Hawaiian! You could use pineapple, and coconut! Yum!
Recipe variations: same cozy, new mood
• Lemon‑berry brioche
Swap sourdough for brioche. Add 1 tablespoon lemon zest to the custard and finish with a lemon glaze (powdered sugar + lemon juice). Super sunshine‑y.
• Almond berry bake
Add 1/2 teaspoon almond extract to the custard and scatter sliced almonds on top for the last 10 minutes.
• Peach melba dream
Replace strawberries with sliced peaches (fresh or thawed frozen) and keep the raspberries. A sprinkle of nutmeg in the custard is gorgeous here.
• Cinnamon streusel crown
Mix 1/2 cup flour, 1/3 cup brown sugar, 1 teaspoon cinnamon, pinch salt, and 4 tablespoons cold butter until crumbly. Sprinkle on after the foil comes off for the final bake. Crunch city.
• Cream cheese pockets
Dot 6–8 ounces of softened cream cheese over the bread before pouring the custard. It bakes into little pockets of tangy creaminess.
• Chocolate‑covered berry vibes
Scatter 1/2 cup mini chocolate chips over the top with the berries. Drizzle with warm ganache to serve if you’re feeling extra.
• Maple pecan crunch
Use brown sugar in the custard, add 1 teaspoon maple extract, and scatter chopped pecans on top before the final bake.
• Dairy‑lighter version
Use 2 cups whole milk + 1 cup half‑and‑half in place of the milk/cream combo. Still rich, slightly lighter.
• Gluten‑free friendly
Use a sturdy gluten‑free loaf. Toasting the chunks before soaking helps retain structure.
• Savory detour (because why not?)
Hold the berries and sugar. Add sautéed mushrooms, spinach, sharp cheddar, and cooked bacon. Reduce sugar to 1 tablespoon (for browning) and bump salt to 1 1/4 teaspoons. Brunch casserole, but make it savory.

Berry French Toast Casserole
Ingredients
- Cooking spray
- 1 (1-pound) loaf unsliced sourdough, or French bread
- 8 large eggs
- 1 1/2 cups each whole milk
- 1 1/2 cup heavy cream
- 3/4 cup white sugar
- 1 tablespoon vanilla extract
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon salt, divided
- 1 pint strawberries, sliced
- 1 pint blueberries
- 1 pint raspberries
Instructions
- Prepare the baking dish. Coat a 9 x 13-inch baking dish with cooking spray; set aside.
- Tear the bread into bite-size pieces. Tear 1 loaf sourdough bread into bite-sized (1 to 2-inch) chunks. Arrange bread in an even layer in the prepared baking dish.
- Make the custard. Whisk 8 large eggs, 1 1/2 cups whole milk and 1 1/2 cups heavy cream, 1/2 cup white sugar, 1 tablespoon vanilla extract, 1 teaspoon ground cinnamon, salt, and together in a large bowl until smooth and combined.
- Pour the custard evenly over the bread, then press the bread down slightly into the custard. Cover with plastic wrap and refrigerate overnight or up to 24 hours. Or to bake right away, let sit for 1 hour at room temperature to give the bread time to absorb the custard.
- Sprinkle the fruit on top and sprinkle sugar on top.
- When ready to bake, arrange a rack in the middle of the oven and heat the oven to 350°F. Take the casserole out of the refrigerator, and set aside at room temperature for 30 minutes to take the chill off while the oven heats. Cover casserole with foil.
- Bake until the casserole for 30 minutes. Uncover the casserole and bake for 15 to 20 minutes longer.
- Remove from the oven and cool for 5 minutes before serving.

Cooking tips: brunch brilliance with zero stress
- Dry bread is best
Yesterday’s loaf wins. If your bread is fresh and fluffy, toast the chunks briefly to remove some moisture. This prevents soggy bottoms and gives you that custardy‑inside, toasty‑top contrast. - Press, don’t mash
After pouring the custard, gently press the top pieces down so they get a little soak. You want saturated, not smothered. - The overnight advantage
An overnight rest isn’t mandatory, but it’s magical. The bread absorbs more custard evenly, yielding a plush, custard‑forward texture. - Spice bloom trick
Whisk cinnamon with sugar before adding to the eggs to avoid little spice “freckles” clumping. - Golden top goals
Remove the foil for the last 15–20 minutes to get color. If you love crunch, sprinkle a tablespoon of coarse sugar on top before the uncovered bake. - Doneness check
The center should look set and spring back lightly. If it’s still wet, give it another 5 minutes. - Serve smart
Let it rest 5–10 minutes so slices hold together. This also saves tongues from “I couldn’t wait” burns. We’ve all been there. - Reheat like a pro
Warm leftovers at 300–325°F for 10–12 minutes or microwave in 20‑second bursts. A splash of milk or a dollop of yogurt on top brings back the creaminess.

Kid tips: turning picky into “more, please!”
- Rename for the win
“Berry Breakfast Birthday Cake” or “French Toast Confetti” gets giggles and bites. - Sprinkle job
Let them be in charge of tossing berries and sprinkling the sugar mix. Tiny hands = big buy‑in. - Topping bar
Set out mini bowls of yogurt, maple syrup, mini chocolate chips, and banana slices. Everyone gets to DIY their slice. - Shapes game
Tear bread into fun shapes or use mini cookie cutters on wider slices. Is it extra? A little. Is it worth it? Always. - Sweetness control
Keep the custard moderately sweet and let kiddos drizzle syrup to taste. It’s fun and flexible. - Breakfast for dinner
Serve with scrambled eggs and sausage for a well‑rounded, super‑happy kid plate.

Grocery hacks: stretch the budget, keep the luxe
- Day‑old deals
Check the bakery discount rack for day‑old sourdough or French loaves. Perfect texture at a sweet price. - Frozen berry backup
No fresh berries? Frozen totally works. Don’t thaw; just scatter on top and add 5 extra minutes to the uncovered bake. - Store‑brand wins
Milk, cream, sugar, and vanilla: store brand often tastes just as dreamy in baked custards. - Vanilla paste perk
If you keep vanilla bean paste around, 2 teaspoons bring speckly, bakery‑level flavor. Not required—just fun. - Bulk eggs
If you make brunchy bakes often, grab an 18‑pack of eggs. Better value, makes weekday scrambles easy. - Bread variety
A mix of sourdough and a couple of leftover rolls? Use what you have. More textures = more interesting bites. - Citrus uplift
Keep a lemon in your crisper. A quick zest over the finished bake brightens everything and feels fancy for pennies. - DIY powdered sugar
Out of powdered sugar? Blitz granulated sugar in a blender with a teaspoon of cornstarch until fluffy. Boom

Make-ahead, storage, and reheating
- Make‑ahead magic
Assemble up to 24 hours in advance. Keep covered in the fridge. Add berries and sugar just before baking for the freshest pop. - Leftovers
Refrigerate in an airtight container for 3–4 days. It reheats beautifully and doubles as a very smug weekday breakfast. - Freezer friendly
Bake, cool completely, then wrap tightly and freeze up to 2 months. Reheat covered at 325°F until warmed through; uncover for the last 5–10 minutes. - Quick reheat tip
For single servings, microwave in 20‑second intervals until warm. Add a spoonful of yogurt or a splash of milk to refresh the custard vibe.
