Best Ever Key Lime Pie

Creamy and rich with just the right amount of zing, this Key Lime Pie is simply the best! You’re only a few ingredients away from this American classic.

 

 

 

It’s that time of year again! Ben’s birthday has come and gone already but of course, his birthday brings new recipes. 

 

It’s so weird because our Walmart hasn’t had boxes of graham crackers and that is a problem when you want to make a graham cracker crust! No graham crackers but they did have prepared graham cracker crusts! 

 

If you remember, he had requested the Cajun Chicken Pasta that was complete yum! No birthday celebration is complete without a dessert! This is where the Key Lime Pie comes in!

 

 

I’m usually not a pie lover but this one found it’s way into my heart and made the rest of the family happy!

 

That incredible combination of tart and sweet is absolutely irresistible and will make this pie a family favorite, guaranteed.

 

 

 

 

Ingredients

Graham cracker crust

  • 1 1/2 cups graham cracker crumbs (or buy a premade crust)
  • 1/3 cup granulated sugar
  • 6 tbsp butter melted

Key Lime Filling

  • 28 oz sweetened condensed milk
  • 1/2 cup sour cream
  • 3/4 cup regular limes or key lime juice
  • zest from 2 regular limes or 4 key limes

Whipped Cream Topping

  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 2 tsp vanilla extract

 

Instructions

Graham cracker crust

  • Preheat oven to 375
  • Mix graham cracker crumbs, sugar, and butter in a small bowl. Press the crumb mixture into an 8″ – 9.5″ pie pan. Bake for 7 minutes. Cool for at least 30 minutes.

Key Lime Filling

  • Preheat oven to 350
  • Whisk together sweetened condensed milk, sour cream, lime juice, and lime zest in a medium bowl. Pour into prepared graham cracker crust and bake for 10 minutes.
  • Let pie cool slightly before chilling. Chill for at least 3 hours.

Whipped Cream Topping

  • Beat heavy cream and sugar together in a mixer until stiff peaks form. Beat in vanilla. Spread or pipe the whipped cream on top of the cooled pie. Top with additional lime zest if desired.

TIP:

To keep your piped cream looking good add gelatin
