Lasagna Cups are plum full of goodness! The rich beefy tomato sauce, ooey gooey cheese, nestled in individual lasagna cups. Life can’t get any better~

 

LASAGNA CUPS

 

 

We love lasagna at my house! After we would make lasagna for dinner, my oldest daughter, Jessica,  would come home for lunch when she was in high school to eat the leftovers! This is a whole new version of yumminess!

These mini lasagna cups are way too much fun. They even have layers of deliciousness. They are pretty easy to put together too and only calls for a few  ingredients. A lot easier to make and a lot more simple than a whole lasagna, but still the same great flavor. In fact, my husband couldn’t get enough of these and said they were better than my regular lasagna.

 

 

 

This is perfect for any time but especially Summer! Less time to make and less mess to clean up!

 

That’s why these mini lasagna cups are pure genius. It’s so easy to make and they’re conveniently made into single-serving portions.

 

LASAGNA CUPS

INGREDIENTS:

  • 1 tablespoon olive oil
  • 1/2 pound hamburger
  • 1/2 onion, diced
  • 1 cup marinara sauce, homemade or store-bought
  • 1 1/2 cups cottage cheese or ricotta 
  •  salt and black pepper, to taste
  • 24 2-inch won ton wrappers
  • 1 1/2 cups shredded mozzarella cheese
  • 2 tablespoons chopped chives

 

DIRECTIONS:

Preheat oven to 375 degrees F. Lightly spray 12-cup standard muffin tin or coat with nonstick spray.

Heat olive oil in a large skillet oven over medium heat. Add hamburger, onion and cook until browned, about 3-5 minutes, making sure to crumble the hamburger as it cooks; drain excess fat and stir in marinara sauce.

Season cottage cheese with salt and pepper, to taste; set aside.

Fit wonton wrappers into each of the 12 muffin tins, pressing carefully to make sure there is an opening in the center. Fill each cup with 1 tablespoon ricotta cheese. Top with 1 tablespoon marinara mixture and 1 tablespoon mozzarella cheese; repeat with one more layer.

Place into oven and bake for 10-12 minutes, or until the cheese has melted and the wonton wrappers are golden brown.

Serve immediately, garnished with chives, if desired.

Dinner is getting kind of hectic these days, we need quick, easy, and warm preferably. Matt’s favorite food is lasagna and so we like to do a twist on that! Enjoy this because I know we did!

  1. could you use cooked lasagna noodles instead of wonton wrappers? also, for the vegetarians in my family, i am going to try plant-based crumbles (fake hamburger bits). That should work, right?
