Peach Ice Cream Pops

It’s been pretty hot around here lately and I know that a good old ice cream pop will make everything better! You can sneak a little fruit into this yummy treat and your kids won’t even know! This peach creation is not too sweet that even grown-ups will love and perfect for any age.

  1. 1/4 cup sugar
  2. 1 tablespoon corn syrup
  3. 1 teaspoon vanilla extract
  4. 1/4 teaspoon salt
  5. 3 large, slightly firm peeled peaches, chopped
  6. 1 tablespoon fresh lemon juice
  7. 1/3 cup heavy whipping cream
  1. Step 1
  2. Combine first 5 ingredients in a medium saucepan over medium-high heat; bring to a boil. Reduce heat to medium, and simmer 5 minutes or until peaches are very tender, stirring frequently. Place peach mixture and lemon juice in a food processor; process until smooth. Refrigerate 1 hour. Stir in cream.

  4. Divide peach mixture evenly among 8 (4-ounce) ice-pop molds. Top with lid, and insert a craft stick into center of each mold; freeze 6 hours or until thoroughly frozen.
