Skinny Chocolate CakeI don’t about you but when I’m trying to cook healthier meals, I crave desserts!  I never could imagine that a low-calorie version would be better than a cake made with cream! Yes, this one is better!!!

 

Skinny Chocolate Cake

 

At first, my husband was a skeptic and letting me know in uncertain terms that he didn’t think it would taste really good. After one bite, he was cursing me for making it because he couldn’t stop eating it!

 

 

It is so moist and full of chocolate flavor that you will think that you died and went to heaven!

 

Skinny Chocolate Cake

Ingredients: 

1 1/2 cups sugar
3 tbsp. vegetable oil
1/2 cup unsweetened applesauce
1 egg
2 egg whites
1 cup low-calorie hot chocolate
3/4 cup unsweetened cocoa powder
2 tsp vanilla extract
1 cup 1% milk
2 cups cake flour 
1 large package instant chocolate pudding (not sugar-free)
1 tsp salt
1 tsp baking powder
1 1/2 tsp baking soda
1/4 cup plain fat-free Greek yogurt
spray oil
 
 

Directions:

Preheat oven to 325°F. Lightly spray and flour your cake pan.
 
In a large bowl combine flour, dry chocolate pudding mix, salt, baking powder, and baking soda and set aside.
 
In a medium bowl, combine HOT chocolate with the cocoa powder until it dissolves. Slowly add milk and vanilla extract. Set aside.
 
Combine the sugar and oil; mix to combine well. Add the applesauce until mixed through. Then add eggs and egg whites until blended.
 
Starting with the dry ingredients, slowly add a little of the dry, then a little of the wet ingredients, alternating between wet and dry until all the ingredients are mixed in.
 

Note: I garnished with a drizzle of chocolate topping and a sprinkle of powdered sugar. Then top it off with raspberries that are the perfect complement to the cake!
